Easter Chick Macaroons

      Where would all the brides, graduates, birthday parties and Holidays be today with out Pinterest!?  Surfing around, I came up with these little Chickadee's...Feel free to decorate them anyway you please, I chose to use pecans for the feet, an almond for the beak, mini chips for the eyes and red string licorice for the top feathers  (... then I ate all the left overs...  :/ )  Have fun with it and let me know what creative ideas you come up with !  Happy Easter  ;)

1 cup shredded, unsweetened coconut
1 Tablespoon Coconut Flour (can sub with regular Flour)
1/2 cup plus 2 Tablespoons lite canned coconut milk ( or regular canned)
2 Tablespoons Agave or Pure Maple Syrup
1/4 cup Swerve Granular Erythritol
Dash vanilla
Scant dash of light salt

     Combine all ingredients in large mixing bowl and microwave for 4 minutes or until firm enough to scoop out in ball shapes.  Scoop into balls on a Silpat lined cookie sheet and bake at 360 degrees for 14-16 minutes.  Let cool before decorating.  Makes about 8-10 Chicks.  Enjoy  ;)
