Mashed Cauliflower Cream Cheese Potato's

     With a smidgen of creativity, you can make your Holiday favorites a little healthier (with out sacrificing any of the flavor)!  Next time you are making Mashed Potato's, sneak a bit of Cauliflower in to bulk it up and no one will be the wiser (... but you)!  This recipe makes 4 servings, each 1/2 rounded cup serving is 87.3 calories, 12.8g net carbs, and 4.4g protein.  And who needs Butter, when Cream Cheese is available! #YUM  :)

1 large white potato
2 cup "riced" Cauliflower
4 Tablespoons/2 oz Fat Free Cream Cheese, brought to room temperature
1/4 cup Buttermilk
Dash Salt
Dash Pepper
Dash Garlic Powder
Dash Onion Powder

     Dice Potato and boil for 20 minutes or til fork tender, drain and set aside.  Use Food processor to chop fresh Cauliflower florets to rice like texture, make sure to not over process or will turn to mush.  Steam in microwave til softened.  Add cooked Cauliflower to cooked Potato, along with Cream Cheese, Buttermilk, and spices to taste~beat with beaters til smooth.  Serve and Enjoy  ;)
