Each of the 11~1/4 cup Pancake Truffles are only 95 calories, 14g carbs, 9g fiber, .9g sugar alcohol, 4.1g net carbs, 6.7g protein and 4.2g fat. Ingredients for 11 servings~
2 teaspoons Coconut Oil, melted
1 cup warm Water
2 Eggs
1/4 cup Lakanto Peanut Butter Powder~use code Paige20 at checkout for discount

Add first set of ingredients to bowl, stir til fully incorporated, pour into cooking spray coated skillet til cooked thru on each side, remove, cool and crumble, set aside. Meanwhile, from second set of ingredients, add Peanut Butter Powder and Syrup to mixing bowl til smooth, dump in pancakes and use hands to mash together til completely combined. Add in Chocolate Chips, and continue mixing with hands. If you want your Chips to be slightly melted, then add in while Pancakes are still slightly warm. Scoop out by 1/4 cup portions, roll into balls, chill til set. Enjoy :)
