Thai Quinoa Spring Salad




      Raise your hand if you are ready to start eating Spring and Summer Salads !?  I'm more than ready for sure !!!  I found this recipe at Ambitious Kitchen's Food Blog and knew it was a must try.  I added a few things to give it a little more protein to make it a complete meal for my family and everyone loved it.  This one takes a little bit of effort, but it is TOTALLY worth the time !!!  Loads of flavor, loads of fun !!!  Monique from Ambitious Kitchen is one talented girl !!!  ;)

Ingredients for Dressing~
1/4 Cup Peanut Butter, natural if possible
2 teaspoons freshly grated ginger ( this is simply buying the ginger at the store, peeling back the skin and grating on your cheese grater~ don't be intimidated by this step)
3 Tablespoons soy sauce, gluten-free if desired
1 Tablespoon Honey ( I use P's Bees from here in Wichita, contact Amy to purchase at 316-200-0314, its the best honey you will ever taste !!! Or use Agave if Vegan  )
1 Tablespoon Red Wine Vinegar or Apple Cider Vinegar
1 teaspoon Sesame Oil
1 teaspoon EVOO
1 Tablespoon Lime juice, or juice of one Lime

     Add peanut butter and honey or agave to microwave safe bowl and cook for 20 seconds.  Add in ginger, soy sauce, vinegar, sesame, EVOO and lime juice. Stir until smooth and creamy. Set aside
  

Ingredients for Salad~
Step One~
3/4 cup Quinoa
1 teaspoon LB Jamisons Chicken Base or 1 cube chicken bouillon
1 1/2 Cup water

     Bring water to boil, add chicken base and stir til dissolved. Add Quinoa, turn down heat to simmer with lid for 15 minutes or til liquid absorbed.  Set aside to cool.  When cooled stir in dressing and add contents to big mixing bowl.

Step Two~
1 pound chicken tenders
Sesame Ginger Salad Dressing ( I use Paul Newman's)
2 cups shredded red cabbage
1 can Chickpeas
1 red bell pepper, diced
1/2 red onion, diced
2 cups shredded  carrots
1 cup of cilantro leaves, loosely packed
3 green onions, chopped for topping
cashew halves for topping

     Cook chicken tenders in skillet with desired amount of Sesame Ginger Salad Dressing til cooked thru and dice into bite size pieces.  Add to Quinoa mixture, along with cabbage, chickpeas, bell pepper, onion, carrots, and cilantro. Top with green onions and cashews.  Enjoy ;)
