Four Leaf Lucky Shamrock







     Wanna get lucky!?  These Four Leaf Lucky Shamrocks will have your dice landing on "snake eyes" with every roll waiting at the end of the rainbow!!!  Not only are they cute, but each 5 inch Shamrock has a charming 120 calories, 5.4g net carbs, and 13.4g protein.  Don't be green with envy, kick up your crafty heels, get your green on and think about who you want to share your pot of gold, err...cluster of clover with.  Then put on your famous Leprechaun smile and let that special person know that "I am luckier for me knowing you"... ;)

Ingredients for 4 Shamrocks~
2oz baked, cooled, peeled Sweet Potato, mashed
2 Tablespoons Nutiva Coconut Flour
1 scoop Quest Vanilla Milkshake Protein Powder
1 Tablespoon Sweet Spreads Maple Pancake Coconutter
1 Tablespoon Egg White
Dash Cinnamon
Dash Vanilla

1 scoop Quest Vanilla Milkshake Protein Powder
3 Tablespoons 25 cal/cup Silk Cashew Milk
3-4 drops Green Food Coloring
Green Sugar Sprinkles

     Mix all dough ingredients in first section together and roll out on Silpat, I used a Pam sprayed sheet of wax paper to pat dough down into a rectangle since it is somewhat sticky.  Once flattened, use 2 inch heart shape cookie cutter and cut out 16 hearts, reserve the scraps.  Pick up Silpat and peel off hearts and arrange on another Silpat lined cookie sheet in the shape of four leaf clover, there may be space in the middle, if so, use scraps to fill in center as well as shape a stem for clover, repeat 3 more times.  Bake at 350 for 7 minutes, remove and cool.  Meanwhile, stir together scoop of protein powder and cashew milk til smooth, add food coloring and stir to incorporate.  Frost cooled Shamrocks, and add green sprinkles.  Find your special good luck charm and eat them together while searching for your pot of gold at the end of the rainbow!  Happy St Patrick's Day, Enjoy  ;)
