Butcher Box Chili

Ingredients for a large pot of Butcher Box Chili~
4 Ears fresh Corn
Salt
Pepper
1 Tablespoon Extra Virgin Olive Oil plus more for rubbing Corn
1 medium diced Onion
1 Tablespoon fresh chopped Garlic
Dash Cayenne Pepper
1 diced Green Pepper
1 large diced Sweet Potato
1 pound All Natural Grass Fed Butcher Box Ground Beef (getbutcherbox.com)
1 packet McCormick Chili Packet
24oz Ragu Spaghetti Sauce or Tomato Sauce
28oz Crushed Tomatoes
15oz can drained Garbanzo Beans (reserve Brine to use in Aquafaba Vegan Cornbread recipe)
16oz can Refried Beans
15oz drained Black Beans
15oz drained Dark Red Kidney Beans

    Rub fresh Corn in EVOO and season with Salt and Pepper, wrap in foil and bake at 400 for 40 minutes, cool and shear corn from cob, set aside.  In large stock pot heat EVOO, add Onions, Garlic and Cayenne til golden brown.  Stir in Green Peppers and Sweet Potato til Peppers are crisp tender.  Add Ground Beef til cooked through, drain grease.  Stir in Chili Packet til well incorporated, then add Spaghetti Sauce, Crushed Tomatoes, Garbanzo Beans, Refried Beans, Black Beans, Red Kidney Beans and Corn.  Simmer on low for an hour or til Sweet Potatoes are softened.  Enjoy  :)
