Quinoa Salad with Cucumber, Feta and Walnuts to die for!!!






      I love the summer salads with all the new fresh vegetables coming out that we haven't thought of all winter.  Such is the salad I threw together tonight for fun !!! Quninoa is suppose to be on the "Super Food" list, so pitch this together and see how you like the flavor combinations!!!  ;)  PS  Feel free to throw in some Corn or Chick Peas if you are feeling crazy.

Ingredients~
1 cup Quinoa
1 large Cucumber
1/4 cup Reduced Fat Feta Cheese
2 Tablespoons chopped Walnuts
1/4 cup Newmans Low Fat Sesame Ginger Salad Dressing

     Bring to boil 2 cups water and 1 cup Quinoa in saucepan, reduce to simmer and cover for 15 minutes, or til liquid is absorbed.  When cooled, add to bowl and mix in the remaining ingredients.  Enjoy ;)
