Shrimp N' Grits by Paige ;)



     My foodie friend Greg is always putting up scrumptious recipes on Facebook that I have to try out !!!  His Shrimp N' Grits were no exception ... the only problem was that it was so darn delicious that I wanted it again and again !!!  The other problem is that there was a full cup of grated Cheese and 2 Tablespoons of butter in the Grits alone !!!  So after "noodling" this dilemma I decided to give this dish a make over and see what we could come up with, and then I would be able to enjoy these flavor combinations more often ~ lets see what you think !!!

Grits:
1 1/3 cup stone ground grits
4 Cups Almond milk (  30 cal/cup)
1 Tablespoon Light Butter
Salt and pepper to taste

     Follow cooking directions on grits but substitute the Almond Milk for the water, stir in grits to boiling milk and reduce heat to low, simmering 30-40 minutes til thickened and stirring frequently, then stir in the butter, salt and pepper to taste.


Shrimp:
2 pounds shelled uncooked shrimp cleaned
1 onion diced
4 Slices Turkey Bacon
1 Tablespoon EVOO
2 teaspoons chopped garlic
Small carton of sliced fresh mushrooms
1/2 Cup Chicken Broth
1 Tablespoon Fresh Lemon Juice
1/2 teaspoon Tabasco
Salt and Pepper to taste
4 Green Onions Diced
1 Roma Tomato Diced
Shaved Parmesan Cheese

     Cook Turkey bacon in Skillet til crisp, set aside to drain on paper towel and crumble when cooled.  Leave residual grease in pan and add a Tablespoon EVOO to heat and add chopped onion and garlic and cook til golden brown ( this may take a good 10-15 minutes), then add sliced mushroom and continue cooking til cooked thoroughly.  After mushroom are cooked add 1/2 cup chicken broth and raise heat to high to simmer off half of broth, about 3 minutes.  Then add the tablespoon lemon juice and half teaspoon Tabasco and the raw shrimp and cook til pink, stirring frequently. When finished cooking, fill your bowl with grits, top with Shrimp, and add crumbled bacon, diced green onion, diced Roma tomato and top with 1 Tablespoon shaved Parmesan Cheese.  You will not miss all the fat from the original recipe and will enjoy all the flavors without any of the guilt !!!  Enjoy  ;)
