Honey Lime Avocado Salad
When you have left over corn on the cob, a huge beautiful avocado, home made honey from your neighbors bee's, and your cast iron skillet itching to come out and play, what do you get ... a colorful salad that is bursting with flavor !!! This is a salad you can feel free to add or subtract according to your hearts desire, with summer time you may have all kinds of produce to play with, so get creative and enjoy the taste of warmer weather !!! ;)
Ingredients~
1 pint Cherry Tomatoes, halves
1 large Avocado, diced
1-2 ears cooked Corn on the Cob, shaved
1/2-1 loose cup of Cilantro Leaves
2 diced Green Onions
1 can tri colored Beans, or Black Beans
1 Tablespoon EVOO
1 large Yellow Onion, diced
1 heaping teaspoon chopped jarred Garlic
Dash Cayenne Pepper
1/2-3/4 pound Chicken Breast, diced
2 Tablespoons Kraft Light Roasted Red Pepper Italian Dressing
Ingredients for Dressing~
3 Tablespoons EVOO
3 Tablespoons Lime Juice
1 Tablespoon Honey, I use P's Bee's Honey ( contact Amy at 316-210-0314 to get your own bottle)
Dash Garlic Powder
Mix first 6 ingredients in large salad bowl. Meanwhile, heat EVOO in Cast Iron Skillet and add chopped Onion, Garlic, and Cayenne Pepper til golden brown, may take 20 minutes. Then add diced Chicken and Light Salad Dressing til cooked thru. Mix Salad Dressing and pour on top of Salad and combine. It's your choice to add the Chicken to the Salad or serve on the side, it will be wonderful either way. Enjoy ;)
