Eggplant Pancakes










     What's a girl to do when she has left over Eggplant !!!???  Make up a pancake recipe, duh !!!  Other than salting the Eggplant to remove any bitterness, and let them sit overnight on a paper towel in the fridge, you just basically throw it all in the blender and fry.  The total calories are only 159 calories, 3.5g carbs, and 22.2g protein.  Hopefully you will have some leftover Eggplant too and will give this a whirl  ;)

Ingredients~
4 oz Eggplant, salted and drained on paper towel over night in fridge ( salt removes any bitterness)
Heaping Tablespoon plain Rice Protein
1 Tablespoon Psyllium Husks
1 Tablespoon shredded Parmesan
1/4 cup Eggwhites
Dash Garlic
Dash Oregano
Dash Basil
Sriracha Hummus, for garnish
Diced Tomato, for garnish
Tossed Green Salad

     Put all ingredients in a Magic Bullet and blend til thoroughly combined, spray a skillet with EVOO Pam and put batter in skillet in 4 patties, cook til golden on each side.  I topped mine with Sriracha Hummus and diced Tomatoes, and served with a large green tossed salad.  Enjoy  :)
