Lemon Crepe's with Chocolate Sauce and Berries






     These Crepe's turned out so delicious that I caught the Hubs sneaking one plain off the top of the stack!  :0  So can you imagine how wonderful they are once they are stuffed with a whipped filling, drizzled with a rich Chocolate Sauce, dotted with heart shaped Strawberries, and finished off with a dash of Whipped Topping as a garnish!?  Then can you imagine devouring all this guilt free since each Crepe is only 109 calories, 6.6g net carbs, and 13.5g protein (stats do not include Strawberries or Whipped Topping garnish)!?  If ya wanna get fancy pants, have a brunch and fill every ones plates with a Crepe and a smile, and you will be the only who knows that these are healthy!  They are just that good  ;)

Ingredients for 7 Crepes~
1 XL Egg
1 Tablespoon Cinnamon Roll Sweet Spreads Coconutter, melted
3/4 cup Cashew Milk ( 25 cal/cup)
2 1/2 scoops Quest Vanilla Milkshake Protein Powder
1 Tablespoon Swerve Confectioners Erythritol
1 Tablespoon Walden Farms Pancake Syrup
1 teaspoon Salt
Dash Cinnamon
Dash Vanilla

2 or 3 5.3oz Yoplait Lemon Greek 100 Whips
3 Tablespoons Waldens Farms Chocolate Syrup
3 Tablespoons Quest Chocolate Milkshake Protein Powder
Sliced Strawberries for garnish
Whipped Topping for garnish

     Blend all the ingredients in the first set in Magic Bullet and chill for several hours or overnight.  While chilling mix 3 Tablespoons Walden Farms Chocolate Syrup and 3 Tablespoons Chocolate Protein Powder in a baggie and set in fridge to chill.  When batter is ready, drop by a scant 1/4 cup onto hot Pam sprayed skillet til lightly golden brown on each side, repeat with remaining batter.  Add a 1/3 of each carton of Whipped Yogurt to each Crepe, roll up, snip the corner of the Chocolate Sauce baggie and drizzle on top of Crepe, top with Berries and Whipped Topping for garnish if desired.  Enjoy  ;)

Honey Chicken with Broccoli and Rice






     What a crowd pleasing dish for dinner!  My family lapped up my Honey Chicken with Broccoli and Rice, and I noticed them going back for seconds (at least it is a healthy dish, right!?).  Check out these stats for an 1/8th of the recipe with a 1/2 cup of Brown Rice is only 325 calories, 38g net carbs and 31g protein.  I especially loved this recipe because there was plenty for left overs tomorrow night ... #priorities  :)

Ingredients for 8 servings~
1 Tablespoon EVOO
1 medium Yellow Onion, diced
1 Tablespoon chopped jarred Garlic
Dash Cayenne
2 pounds boneless skinless Chicken Tenderloins
1 1/2 pounds Broccoli Florets
1/4 cup Honey
1/3 cup low-sodium Soy Sauce
6oz Tomato Paste
1/4 cup Rice Wine Vinegar
1 Tablespoon Sriracha
1 teaspoon Sesame Oil
1 teaspoon Onion Powder
Dash Pepper, to taste
4 cups cooked Brown Rice
3 Green Onions, diced for garnish

     Heat EVOO in skillet, add Onions, Garlic and Cayenne til golden brown.  Then add Chicken til cooked thru, breaking into bite size pieces.  Add Broccoli, Honey, Soy Sauce, Tomato Paste, Vinegar, Sriracha, Sesame Oil, Onion Powder and Pepper~cook til Broccoli is crisp tender.  Divide into 8 equal parts and serve over 1/2 cup cooked Brown Rice and garnish with Green Onions.  Enjoy  :)

Double Layer Chocolate Cake







     Sometimes dreams really do come true!!!  Case in point, my Double Layer Chocolate Cake!  Not only is this BEAUTIFUL to gaze upon, the taste knocked my socks off!  And if life wasn't already good enough, an 1/8th of the cake is only 219 calories, 8g net carbs and 22g protein.  Doesn't all this just put a smile on your face!?  I know it does mine  ;)

Ingredients for an 8 piece cake~
4oz(8 Tablespoons) Cream Cheese, room temperature
7oz 2% Fage Greek Yogurt
2 Tablespoons unsweetened Cocoa Powder
1 scoop Quest Chocolate Milkshake Protein Powder

     Mix first set of ingredients in bowl til smooth, set in fridge to chill.  Meanwhile, stir all ingredients in second set of ingredients til well blended and pour into 7 inch parchment paper lined cake pan.  Bake at 325 for 35 minutes, remove to cool, then set in fridge to chill over night or several hours til set (DON'T OVER BAKE).  After chilled,remove cake from pan and parchment paper, set about 8 tooth picks about an inch from the bottom all around the cake to use as a marker to slice cake in half horizontally.  Set two halves side by side and frost each layer on top and sides, set one on top of the other and garnish with Lily's Premium Baking Bar by scraping a fork along the chocolate to garnish.  Top with Whipped Topping for garnish if desired and serve.  Enjoy  :)

Peanut Butter Sandwich Cookies






     Forget those Girl Scout Peanut Butter Sandwich Cookies, we have something even better!!!  Healthy Peanut Butter Sandwich Cookies are the new and improved #1 favorite go to treat on the planet!  Those chic's with the green sash has nuttin' on me!  Each hearty cookie is 147.5 calories, 3.8g net carbs, 18g protein, take that you little scouts!  What are you waiting for, time to get your cookie on ;)

Ingredients for 4 Sandwich Cookies~
2 Peanut Butter Supreme Quest Bars
2oz/4 Tablespoons Fat Free Cream Cheese
1 scoop Peanut Butter Quest Protein Powder
2 Tablespoons Swerve Confectioners Style Erythritol

     Unwrap Quest Bars and break each bar into 4 equal parts, microwave all 8 pieces for 10-12 seconds and pat into flattened circles and lay onto Silpat lined cookie sheet, bake at 350 for 4 minutes.  Remove and cool.  Meanwhile stir together Cream Cheese, Protein Powder, and Erythritol til smooth and divide into 4 equal parts and spread on top of cooled cookies and top with remaining 4 cookies.  Enjoy  ;)

Chocolate Chunk Brownie Batter







     So when did eating Brownie Batter right out of the bowl become legal, ...AND ENCOURAGED!?  Now!!!... that's when!!!  Yippie Skippie!!!  Can breakfast or dessert get any "funner"!?  For a half cup Chocolate Chunk Brownie Batter it is only 200 calories, 16g net carbs and 20g protein.  Make this up at night, stick it in the fridge and it will be ready to eat by the time the sun comes up in the morning!  Brownies for breakfast made healthy  ;)

Ingredients for 5~1/2 cup servings~
1 cup 25 cal/cup Cashew Milk
1 cup Old Fashion Oats
5.3oz Dannon Light&Fit Vanilla Greek Yogurt
4oz mashed Banana

1 Double Chocolate Chunk Quest Bar, diced

Sweet Cinnamon Roasted Chicken








     Is there anything better than a slow roasted chicken covered in savory homemade spice rub!?  The wonderful aroma fills your house as it wafts from the oven.  Making your own rub is fun and easy, combine it with some melted Sweet Spreads Coconutter and you will end up with a Chicken made for a King.  Try out Sweet Cinnamon Roasted Chicken this week and see if you agree ;)

Ingredients for 6-8 servings~
1 (6 1/2-7 pound) Chicken
2 Tablespoons Cinnamon Roll Sweet Spreads Coconutter
1 1/2 teaspoons ground Cumin
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon ground Allspice
1 teaspoon Paprika
1/2 teaspoon Salt
1/2 teaspoon Pepper
1 large Lemon, halved

     Rinse Chicken, pat dry, and place in roasting pan.  Melt Cinnamon Roll Sweet Spreads and blend with rest of spices to make a paste, then rub all over Chicken.  Roast for one hour, remove from oven and squeeze lemon juice all over Chicken then stuff Chicken with Lemon halves in the main cavity.  Return Chicken to oven and continue to roast one more hour.  Remove, let set for 15 minutes, carve and serve.  Enjoy  :)

Crockpot Enchilada Tamale Pie






     Although this may not be my typical high protein low carb recipe, it's still not too shabby for a large gathering.  Crockpot Enchilada Tamale Pie is great for those days that you have to feed a crowd but don't have a lot of time.  These amazing flavors combine to total 12 hearty servings, each hefty cup has 333 calories, 38g net carbs and 16g protein, (feel free to sub with any of my suggestions in the recipe for leaner stats).  The next time you get a hankering for Mexican start the celebration with this festive dish!  Ole'

Ingredients for 12~
1 Tablespoon EVOO
1 medium Yellow Onion, diced
1 Tablespoon chopped jarred Garlic
Dash Cayenne Pepper
1 pound 93% lean ground Turkey (can sub with 99% lean if desired)
10oz Enchilada Sauce
2-15oz cans Kidney Beans, or mixed Beans
3/4 cup Cornmeal
1 1/4 cup Flour (sub with Oat Flour if desired)
1/2 cup Sugar (sub with Erythritol, Stevia or Coconut Sugar if desired)
2 teaspoon Baking Powder
1 teaspoon Salt or Lite Salt
1 cup 25 cal/cup Cashew Milk
1 XL Egg (sub with 1/4 cup Egg Whites if desired)
1/4 cup Canola Oil
15oz drained Corn
4oz Diced Green Chili's
3/4 cup shredded Cheddar Cheese (sub with low or reduced fat Cheddar if desired)

     Heat EVOO in skillet and add Onions, Garlic and Cayenne til golden brown.  Then add ground Turkey til cooked thru, drain and remove excess oil.  Stir in Enchilada Sauce and Beans, then pour into Pam sprayed Crockpot.  Add remaining ingredients to bowl (minus 1/4 cup shredded Cheddar, reserve that to sprinkle on top) and stir til well blended, pour over top of Turkey mixture in Crockpot.  Sprinkle batter with remaining Cheddar Cheese and cook on low for 5 hours or til Cornbread is desired level of done. Strawberry Rhubarb Protein Cobbler






     Strawberry Rhubarb Cobbler has always been one of my favorites, so why not create a healthy version that can be enjoyed guilt free!?  No reason that I can think of!  I love that tart sweet combination, not to mention the crumbly topping!  Top it with a little Strawberry Yogurt and you have the perfect dessert all for 157 calories, 12g net carbs, and 16g protein.  Hello summer desserts  ;)

Ingredients for 12 servings~
2 Quest Cinnamon Roll Protein Bars
1 pound chopped frozen Rhubarb, thawed
1 pound fresh Strawberries, chopped
1/2 cup Swerve Granular Erythritol
2 scoops Quest Strawberry Protein Powder
Dash Salt
Dash Cinnamon
Dash Vanilla
1/2 cup Nutiva Coconut Flour
2 Tablespoons Cinnamon Roll Sweet Spreads Coconutter, melted
1/2 cup Oats
Dannon Light&Fit Greek Strawberry Nonfat Greek Yogurt (1/2 of each 5.3oz container per slice for topping, Or in other words it will take 6 of the 5.3oz containers for the entire recipe as a topping for each of the 12 pieces)

     Unwrap the 2 Quest Bars and microwave for 12 seconds each, then flatten to a very thin layer on a Silpat lined cookie sheet and bake at 400 for 5 minutes.  Remove and cool.  While cooling, stir Rhubarb, Strawberries, 1/4 cup of the Erythritol, Protein Powder,Cinnamon, Vanilla, and Salt into a saucepan and let sit for 5 minutes, then bring to a soft boil for 5 minutes, or til Rhubarb becomes tender.  Remove from heat and stir in Coconut Flour and pour into pam sprayed 9X13 pan.  Meanwhile, crumble cooled Quest Bars into a Magic Bullet and grind to powder, add to bowl along with the Oats, melted Cinnamon Roll Sweet Spreads, 1/4 cup Granular Erythritol, Cinnamon and Vanilla~sprinkle crumb topping on top of Strawberry Rhubarb mixture and bake at 350 for 20 minutes making sure topping does not burn.  Remove and cool, top each of the 12 pieces with a half of a 5.3oz  container of Dannon Light&Fit Greek Strawberry Non Fat Yogurt.  Enjoy  :)

Cherry Pecan Protein Fudge







     I have always loved Cherries and Pecans in one mouthful, but turn it into fudge and I will have a hard time keeping my sticky fingers out of it!  Luckily for me this is very healthy fudge and I don't have to rely on will power, I can dig right in!  For a 1/6th of the recipe it is only 194 calories, 4.8g net carbs and 9.3g protein.  This will be great for a holiday treat or simply an after dinner snack when those cravings are at their worst!  Have at it  ;)

Ingredients for 6 servings~
1/4 cup White Chocolate Sweet Spreads Coconutter, melted
1/4 cup Swerve Confectioners Erythritol
1/2 cup 25 cal/cup Cashew Milk
1 scoop Quest Strawberry Protein Powder
1 Tablespoon Nutiva Coconut Flour
Dash Cinnamon
Dash Vanilla
1 Quest White Chocolate Raspberry Protein Bar, finely chopped
2oz/(60g) pitted Cherries, chopped
1/4 cup chopped Pecans

     Stir together melted White Chocolate Sweet Spreads Coconutter, Erythritol, Cashew Milk, Protein Powder, Flour, Cinnamon, and Vanilla til thoroughly incorporated.   Then gently fold in diced Protein Bar and Cherries, pour into wax paper lined loaf pan and press chopped Pecans on top slightly pressing into fudge.  Set in freezer til set, remove and cut into 6 equal parts.  Enjoy  :)

Peanut Butter Cup Mugcake






     If you could wake up to a mug of Peanut Butter Cups, wouldn't morning be your favorite time of the day!?  Then if you knew it was only 360 calories, 7.5g net carbs and 49g protein wouldn't you now be an official "morning person"!?  Whelp, get ready to enjoy chunks of Peanut Butter Cups, rich Peanut Butter Cake and flowing streams of Chocolate Syrup guilt free.  I can't wait til tonight so I can go to bed and be that much closer to breakfast  ;)

Ingredients for one Mug~
1 scoop Quest Peanut Butter Protein Powder
3 Tablespoons Egg Whites
1/4 cup low fat Cottage Cheese
1 Tablespoon Swerve Granular Erythritol
Dash Salt
Dash Cinnamon
Dash Vanilla
1 Quest Cravings Peanut Butter Cup (only 1 cup), crumble
1/2 Tablespoon Nut Butter, of your choice
1 Tablespoon Walden Farms Chocolate Syrup
Whipped Topping as garnish, if desired

     Spray a mug with Pam and fill with the Peanut Butter Protein Powder, Egg Whites, Cottage Cheese, Erythritol, Salt, Cinnamon, Vanilla, and crushed Peanut Butter Cup~stir and microwave for 1 minute 20 seconds.  Meanwhile stir together Nut Butter and Chocolate Syrup til fully incorporated and smooth.  When Mug Cake is done transfer to a plate and top with Syrup, add Whipped Topping as garnish if desired.  Enjoy  :)

Turtle Brownie Sundae








     Every once in a while all the stars in the universe line up and luck falls your way !!!  I dreamed about melting caramel, gooey chocolate, and cascading vanilla ice cream all night and ended up with this Turtle Brownie Sundae recipe!!!  I hoped out of bed this morning and got my Caramel on ...  using a Double Chocolate Chunk Quest Bar, protein Vanilla Ice Cream, Pecans and Chocolate Chips I knew I could create a masterful healthy snack/dessert all in one !!! AND, each Turtle Brownie Sundae is only 244.3 calories, 6.3g net carbs and 25.6gprotein ~ ... and btw, we all know who wins the race between the Turtle and the Hare ...  #WINNINGFIRSTPLACE  ;)

Ingredients for Ice Cream~
1/2 cup Half N Half
1/2 cup Almond or Cashew Milk( I try and use the 25-30 cal/cup)
1 Tablespoon Swerve Confectioners Erythritol
1 scoop Quest Vanilla Milkshake Protein Powder
Dash Cinnamon
Dash Vanilla

     Mix all together in large mixing bowl and blend on high with hand mixer til thickened and frothy for several minutes.  Pour into 9X13 pan and place in freezer for a couple hours. Remove and let soften on counter as needed to get to "scoopable" consistency.  I divided the recipe into 6, each portion is 44 calories, .75g carbs and 4.7g protein.

Ingredients for Caramel~
4 Medjool Dates~ soaked in water for 30 minutes,drain and remove pit 
2 Tablespoons Reduced Fat Shredded Coconut
2 Tablespoons chopped Cashews
1/4 cup Half n Half
2 Tablespoons Walden Farms Caramel Syrup
1 Tablespoon Swerve Confectioners Erythritol

     Blend all ingredients in Magic Bullet til smooth as possible.  Should yield about 3/4 cup, store in refrigerator.  I used one teaspoon for this recipe at 13 calories, 2g carbs and .2g protein.

Ingredients for Brownie~
2  Quest Double Chocolate Chunk Quest Bars, diced
2 Tablespoons Half N Half
1 Tablespoon Swerve Granular Erythritol
1 Pecan Half, broken into pieces, for topping
3 Lily's Stevia Sweetened Chocolate Chips, for garnish

      Mix first 3 ingredients together in bowl and microwave for 25 seconds, stir til almost smooth~I left mine a little lumpy to enjoy the chunks in the Brownie.  Pour in 2 Pam sprayed ramekins  and bake at 350 for 5 minutes.  Remove and cool slightly, place one serving on each of the two plates. Top with 1/6 of the Ice Cream,1 teaspoon of the Caramel, 1 Pecan Half broken into pieces, and finish with 3 Lily's Stevia Sweetened Chocolate Chips for garnish, if desired.  Enjoy the heck outta this!!!  Hello Heaven !!! Get into my mouth !!!  :)
