Coconut Cream Cake







     Can you believe this is real life right now!!!???  Not only is this BEAUTIFUL but for an 1/8th of this Coconut Cream Cake it is only 198 calories, 6.3g net carbs and 19.3g protein.  Can you give me any good reason you would not make this as soon as you could gather all the ingredients!?  I know when I "thunked" it I couldn't put the small pot in the big pot fast enough!  You don't need a fancy occasion to enjoy this classic, it will satisfy any healthy desire day or night ;)

Ingredients~
3 scoops Quest Vanilla Milkshake Protein Powder
3/4 cup cooked and mashed Cauliflower
2/3 cup Egg Whites
1 XL Egg
1/4 cup melted Coconut Oil
1/4 cup Swerve Granular Erythritol
2 Tablespoon Coconut Flour
1 Tablespoon Coconut Extract
1 teaspoon Salt
Dash Vanilla Extract
1 teaspoon Baking Powder
Dash Cinnamon

2oz (4 Tablespoons) fat free Cream Cheese, room temperature
5.3oz Coconut Cream Dannon Oikos Triple Zero Greek Yogurt
1 scoop Quest Vanilla Milkshake Protein Powder
1/4 cup Swerve Confectioners Erythritol
1 Tablespoon Coconut Extract

1/4 cup reduced fat shredded Coconut
Strawberry and Blackberry for garnish, if desired

     Beat all ingredients well in first set in Magic Bullet, Food Processor or with beaters.  Line a 7 inch cake pan with parchment paper and fill with cake batter.  Bake at 325 for 35-40 minutes, making sure not to over bake protein products as it will dry out, remove and cool.  Meanwhile, whip second set of ingredients well for frosting and chill til ready.  After cake is cooled, lift out of pan via parchment paper and set on platter to frost and sprinkle with shredded Coconut.  Garnish with berries if desired.  Enjoy  :)
