Lemon Blueberry Pancakes
Pucker up! Not because of the "lemony yumminess" you are about to encounter, but because you are going to want to kiss me! Then when you find out this is only 256 calories, 21.4g net carbs and 41.3g protein you are gunna wanna kiss me again... and maybe throw caution to the wind and give me a hug too! Share with your Honey and prepare for all the smooches that follow Lemon Pancakes. :)
Ingredients~
1 scoop Vanilla Milkshake Quest Protein Powder
3 Tablespoons Egg Whites
5.3oz Greek Non Fat Lemon Yogurt
1 Tablespoon Swerve Confectioners Erythritol
1 teaspoon Baking Powder
1 teaspoon Lemon Juice
1/4 cup Blueberries
1 Tablespoon Walden Farms Pancake Syrup
Mix Protein Powder, Egg Whites, half of the Yogurt, Erythritol, Baking Powder, and Lemon Juice in Magic Bullet til whipped together. Add 1/4 cup to Pam sprayed pan and add 6 Blueberries to batter and push into batter, then flip and cook the other side til golden brown, repeat 2 more times. Spread each Pancake with the rest of the Yogurt and top with a few more Blueberries and stack. Mix remaining Blueberries with Pancake Syrup and pour over stack. Enjoy :)
