Cherry Pecan Ice Cream

I scream you scream we all scream for ice cream!!!  And scream we should...a huge fourth serving is only 179 calories, 17.5g net carbs and 15.6g protein!  I am loving the fresh cherries out right now and couldn't help but grab a bag at the Market and rush home to whip together some of my favorite Ice Cream, but with a healthy twist of course!  I hope you will give this summer delight a try as soon as possible!  :)

Ingredients for 4 hearty servings~
2 cups fat free Half&Half
2 scoops Quest Vanilla Milkshake Protein Powder
20 pitted fresh Cherries, diced
2 Tablespoons chopped Pecans
Dash Cinnamon
Dash Vanilla

Mix all together in a 9X13 pyrex pan and put in freezer, remove and stir every 45 minutes til set to desired consistency.  I usually do this process 3 or 4 times til satisfied.  If the Protein Powder flavor is too strong, then cut back to 1 or 1.5 scoops on next batch.  Enjoy  :)

  1. Could you throw all the ingredients into an ice-cream maker instead?

  2. Trixie I have never tried that, but it would thrill me if you did and tell me how it turns out! I'm sure it would be great! I did it this way out of sheer laziness and simplicity :)

  3. Trixie you have inspired me to pull out my Cuisinart and practice this weekend with some protein Turtle Ice Cream. My machine doesn't require ice or salt, so I can still be a little lazy. I remember when I was a kid watching my dad, uncle and grandpa taking turns cranking the ice cream maker, my how times have changed! ;)
