Raspberry Cheesecake Muffins
Raspberry Cheesecake Muffins are not just a breakfast food, they are great any time of day... or night! Enjoy these macro friendly delights for only 130 calories, 5g net carbs and 12g protein. Ingredients for 6 Muffins~
2oz Cream Cheese, melted
1 Tablespoon melted Coconut Oil
1 Extra Large Egg
1/2 cup 25 cal/cup Cashew Milk
1/4 cup Coconut Flour
1/4 cup Lakanto Monk Fruit~use code Paige20 for discount at checkout
1 scoop Quest Vanilla Protein Powder
1 teaspoon Baking Powder
1/2 teaspoon Salt or Lite Salt
Dash Cinnamon
Dash Vanilla
1 Quest White Chocolate Raspberry Protein Bar, chopped
6oz fresh Raspberries, reserve 18 Berries for topping
Stir all ingredients together, except for the 18 reserved Berries. Pour into 6 silpat lined muffin tins and top each muffin with 3 Raspberries and gently pat into top of batter. Bake at 350 for 24 minutes. Remove, cool and Enjoy :)
