Apple Oat Coconut Truffles







     Truffles are not just a fluffy past time treat anymore... now it's serious stuff!  Apple Oat Coconut Truffles are the perfect breakfast, dessert or healthy snack... or better yet all three!  Each of the 15 delicious spheres are only 36.7 calories, 1.9g net carbs and 4.2g protein.  What time of day do you think is the best Truffle time ...anytime is my answer!  :)

Ingredients for 15 Truffles~
1/3 cup Egg Whites
1/3 cup 25 calories/cup Silk Cashew Milk
1 scoop ABS Cinnamon Roll Protein Pancake Mix
1 Tablespoon Sweet Pumpkin Pie Sweet Spreads Cashew Butter
2 Tablespoons Walden Farms Pancake Syrup
1/2 scoop Quest Salted Caramel Protein Powder
Detour Smart Apple Cinnamon Oatmeal Bar, diced
2 Tablespoons reduced fat shredded Coconut
2 squares Lily's Stevia Sweetened Sea Salt Dark Chocolate

     Mix Egg Whites, Cashew Milk, and ABS Protein Pancake Mix til smooth in Magic Bullet. Cook batter on Pam sprayed hot skillet till golden brown on each side.  After cooled, tear the pancakes into crumbles and stir in Cashew Butter, Pancake Syrup, Salted Caramel Protein Powder, and diced Detour Bar til well incorporated.  Roll into 15 ball and roll in Coconut, then drizzle with melted Chocolate by sniping corner off a baggie.  Enjoy  ;)
