Whipped Cream Mousse Cake







     Whoa buddy!!!  Four layers of drool worthy richness to fawn over in this Whipped Cream Mousse Cake.  My biggest concern is deciding which layer is my favorite, this cake may take a little more effort than most...but as you can see for yourself, the investment is well worth the payoff!  Each of the hearty 12 pieces are only 210 calories, 9.4g net carbs, and 16.4g protein.  Slip on your kitchen apron and create your own Picasso!  ;)

Ingredients for 12 pieces~
Cake Layer~
1/2 cup Cashew Butter or Nut Butter of your choice
1 scoop ABS Cinnamon Roll Protein Pancake Mix
1/2 cup 25 calorie/cup Silk Cashew Milk
1/4 cup Swerve Granular Erythritol
1 jumbo Egg
2 Tablespoon Pecan Chips
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

     Stir all together til well blended and pour into parchment lined 8X8 dish and bake at 375 for 10-12 minutes.  Remove and cool.  Note~ may be slightly sticky, can spray Pam on your hands and pat into corners.

Peanut Butter Mousse Layer~
8oz softened fat free Cream Cheese
1/3 cup Betterbody Foods Peanut Butter Powder
1 scoop Quest Peanut Butter Protein Powder
1/4 cup Swerve Confectioners Erythritol
Dash Cinnamon
Dash Vanilla

     Stir all together til blended smoothly, spread on top of cooled cake and chill while making next layer.

Ganache Layer~
1 Tablespoon Betterbody Foods Coconut Oil, melted
2 Tablespoons Lily's Stevia Sweetened Dark Chocolate Chips, melted
3/4 cup 25 calorie/cup Silk Cashew Milk
1 scoop Quest Chocolate Milkshake Protein Powder
2 Tablespoons Unsweetened Cocoa Powder
2 Tablespoons Swerve Confectioners Erythritol
Dash Cinnamon
Dash Vanilla

     Blend all together til well combined and pour over chilled Peanut Butter Mousse layer, return to fridge to chill while making last layer.

Whipped Cream layer~
1/2 cup Heavy Whipping Cream
3 Tablespoons Swerve Confectioners Erythritol
Scant dash Cinnamon
Scant dash Vanilla
1 Detour Simple Caramel Peanut Protein Bar or other favorite Protein Bar, diced into bits
1 unsweetened Chocolate Baking square, for garnish if desired

     Add Whipping Cream, Confectioners, Cinnamon and Vanilla to bowl and beat with mixer til stiff peaks form.  When thickened, spread on top of chilled Ganache layer, sprinkle with diced Detour Bar and scrape Chocolate Baking square with fork tines to garnish with Chocolate scrapings, if desired.  Chill til ready to serve.  Enjoy  ;)
