Hungarian Paprika Chicken with Zoodles





     When life gives you Hungarian Paprika make Chicken...and Chicken I did!  If you are looking for an out of the ordinary spice, I recommend giving this a whirl!  Check out the macros on this delight, for each of the 4 hearty servings, it is only 250 calories, 13.6g carbs and 36g protein, you simply can't beat those numbers!  Hungary is making me hungry  ;)

Ingredients for 4 servings~
1 Tablespoon Extra Virgin Olive Oil
1 medium sweet yellow Onion, diced
1 Tablespoon diced chopped Garlic
Dash Cayenne Pepper
2 heaping teaspoons Hungarian Paprika
1.5 pounds boneless skinless Chicken Tenders
14.5oz petite diced Tomatoes
1/2 cup Fat Free Half & Half
1.5 pounds fresh Zucchini
Diced Green Onions, for garnish if desired
Salt to taste

     Heat EVOO in skillet and add diced Onion, Garlic, Cayenne and 1 heaping teaspoon Hungarian Paprika til golden brown.  Add Chicken and remaining heaping teaspoon Hungarian Paprika til Chicken cooked thoroughly, break into bite size pieces with back of spatula.  Pour in Tomatoes and Half&Half, simmer 15 minutes.  Meanwhile, sprialize Zucchini into long thin strands and place in large bowl.  Add Chicken mixture to Zoodles, garnish with diced Green Onions and Salt to taste.  Enjoy  :)
