Lemon Bars
Pucker up, it's time to experience healthy Lemon Bars with no regret! How could you ever feel bad when it feels so good to know you are only consuming 103 calories, 1g net carb and 6g protein per serving!? And if you're feelin' frisky why not have another while you are at it...some might call that greedy...but I just call it an afternoon snack...and it still would only amount to 2 carbs! This one is a winner all the way around, great flavor, awesome macros and good looks ;)
Ingredients~
2 Lemon Quest Bars, unwrapped
1 Lemon, approx 4.5oz
1/4 cup Coconut Oil
4 Extra Large Eggs
1 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
1 teaspoon Lemon Extract
Lakanto Confectioners Monk Fruit~use code Paige20 at checkout for discount, for garnish topping
Lemon Curls, for garnish if desired
Microwave unwrapped Lemon Quest Bars in microwave for 15 seconds each and pat into pam sprayed 8X8 pan to form crust. Slice off the ends of Lemon and slice into thin slices removing any seeds, add to food processor til mushy consistency. Add remainder of ingredients and pour over top of crust, bake at 375 for 28 minutes, remove and chill over night, top with Confectioners Monk Fruit for garnish and Lemon Curls if desired. Enjoy :)
