Pumpkin Pecan Bars








     Whatever the season, you can't go wrong with a batch of Pumpkin Pecan Bars.  Each of these nine hearty pieces are only 137 calories, 4.4g net carbs and 9.5g protein.  I just love Pecans, and especially with Pumpkin.  So enjoy these for breakfast, dessert or afternoon snack and relish all the payoffs that come from that bright orange squash!

Ingredients for 9 large servings~
15oz Pumpkin
2  Extra Large Eggs
1/2 cup Egg Whites
2 scoops Quest Salted Caramel Protein Powder
1/3 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
1/4 cup Coconut Flour
2 Tablespoons melted Coconut Oil
1 teaspoon Baking Powder
Dash Pumkin Pie or Cinnamon
Dash Vanilla
1/4 cup chopped Pecans

     Mix together all ingredients except Pecans and pour into parchment lined 8X8, then sprinkle with Pecans.  Bake at 375 for 27 minutes.  Enjoy  :)
