Keto Pizza Meatballs
Pizza comes in many forms, and meatballs are one of them. My Keto Pizza Meatballs are filled with savory goodness and perfect for a low carb lifestyle. Each of the 16 are only 102 calories, 1.8g carbs, .4g fiber, 1.4g net carbs, 10.4g protein and 6g fat. Serve with steamed Broccoli topped with melted Butter, if you need to add more fat in your meal.
Ingredients for 16 Meatballs with Sauce~
1 pound 92% ground Beef
2 jumbo Eggs
Dash Italian Seasoning, Salt, Pepper, Garlic Powder, Onion Powder
1/2 cup shredded Parmesan
1/4 cup chopped Onion
1.5oz Barbecue flavored Pork Rinds, crushed (sub with regular)
8oz can Tomato Sauce
6.5oz drained sliced Mushrooms
3/4 cup shredded Mozzarella
Parsley, for garnish, if desired
Add Beef, Eggs, desired Seasoning, Parmesan, Onions, and 1oz of the crushed Pork Rinds to mixing bowl, blend well with hands til well incorporated. Weigh out 16 Meatballs, each should be 1.5 ounces. Dip the top of each Meatball in remaining crushed Pork Rinds. Add Tomato Sauce and Mushrooms to Pam coated baking dish, top with Meatballs, bake at 400 for 30 minutes. Remove and top with Mozzarella and Parsley. Enjoy :)
