Keto Egg Fast Muffins






     Doing a 5 day Egg Fast encourages creativity to avoid monotony!  How does the saying go...!?  Necessity is the mother of invention!?  I had seen a few Keto Egg Fast Muffins recipes and decided to put my own twist to the test.  Each Muffin is 145 calories, 4g carbs, 4g sugar alcohol, zero net carbs, 5g protein and 13.3g fat.  These are absolutely delicious, and you can determine the middle creaminess by controlling the baking time.  #choices #ketoon

Ingredients for 4 Muffins~
2oz/1/4 cup Cream Cheese, softened to room temperature
2 Tablespoons Butter, softened to room temperature
2 Extra Large Eggs
Rounded Tablespoon Lakanto Monk Fruit~use code Paige20 for discount at checkout
Dash Cinnamon
Dash Vanilla

     Whip Cream Cheese til softened and fluffy, add in Butter and continue to incorporate, then add the rest of the ingredients and continue beating til fully incorporated.  Drop 1/4 cup batter into 4 silpat lined cupcake liners.  Bake at 325 for 20 minutes for creamy middle and 25 minutes for a more firm texture.  Chill in fridge til set and ready to eat.  Enjoy  :)
