Keto Praline Squares






     How can you look at these and not want to jump right into the picture and take a bite!  These are the softer version of Peanut Brittle, Pralines rule and Brittle drool...just sayin.  Each of the 9 squares are only 158 calories, 14g carbs, 1.3g fiber, 10.7g sugar alcohol, 2g net carbs, 4g protein and 15g fat.  This is definitely one to try as soon as possible!

Ingredients for 9 squares~
1/4 cup Butter
1/2 cup Lakanto Golden Monk Fruit~use code Paige20 at checkout for discount
2 teaspoons Vanilla
1.5 cups Salted Mixed Roasted Nuts
1/4 teaspoon Pink Himalayan Salt

     Add all ingredients to Saucepan, bring to low simmer for 5 minutes and pour into parchment lined 8X8, chill til set, cut into 9 equal squares.  Enjoy  :)

Keto Fudge Chocolates






     These are a little bit Fudge and a little bit Chocolate...(no Country nor Rock n' Roll).  But, if Fudge and Chocolates had a baby, this would be it!  Each square is only 68 calories, 11.5g carbs, 4.5g fiber, 4.7g sugar alcohol, 2.3g net carbs, 1.2g protein and 6.3g fat.  And the best part is, these are so rich that a little square will do ya.  :)

Ingredients for 36 Squares~
2 1/2 cups Lily's Stevia Sweetened Dark Chocolate Chips
1/3 cup Coconut Cream~the solid part at the top of the can
1/4 cup Heavy Whipping Cream
1/4 cup Lakanto Confectioners Monk Fruit~use code Paige20 at checkout for discount~increase sweetener to taste
Dash Pink Himalayan Salt~sub with Regular Salt
Dash Vanilla
Dash Cinnamon

     Add all ingredients to 3-4 quart parchment lined Crockpot, stir and heat on low for 2 hours, turn off, remove lid, do not touch for 45 minutes.  Then stir til well incorporated and pour in parchment lined 8X8 pan, chill til set, cut in 36 equal parts, should be slightly over a 1X1 inch square.  Enjoy  :)  PS  I consider these Bittersweet, feel free to increase your sweetener if you want a sweeter product.

Salted Nut Clusters









     This process could not be any easier, ...or better!  Typical Clusters are filled with Peanuts, but I took a walk on the wild side and use mixed Nuts...but by all means be your own dog and bark up whatever Nut your sweet little heart desires....unless there are allergy probs...then reconsider using death Nuts in your Clusters.  For each heaping Tablespoon it is only 132 calories, 6.3g carbs, 2.8g fiber, 1g sugar alcohol, 2.5g net carbs, 4.6g protein and 11.7g fat.  The nice thing is these are completely sugar free, and a very good for you treat.  #winning

Ingredients for 24 Clusters~
1/2 cup no sugar added Peanut Butter
1/2 cup Lily's Stevia Sweetened Chocolate Chips
3 cup mixed Salted Roasted Nuts (sub with favorite Nut)

     Mix Peanut Butter and Chocolate Chips in microwave safe bowl, heat for 20 seconds, stir, repeat if necessary til smooth and well blended.  Stir in Nuts til fully coated, drop by heaping Tablespoons on parchment paper, chill in fridge til set.  Best served chilled, they do have a tendency to soften in your fingers if held too long...(which wasn't a problem for me...).  Enjoy  :)

Cranberry Orange Jam






     Loving the festive nature of Cranberries, especially at the Holidays... and especially in Jam form.  Can you think of a better gift to share!?  Especially when each 1/4 cup is only 21 calories, 21g carbs, 3.4g fiber, 16g sugar alcohol, 1.6g net carbs, zero protein and zero fat.   This is a perfect topper for Yogurt, Chicken, Pork, Fish, Turkey, Ice Cream, Cheesecake or anything else you desire.  Make a batch and share it with your friends...just make sure to save a little for yourself!  ;)

Ingredients for 16 servings, approximately 4 cups~
24oz raw Cranberries
1 cup Water
2 cups Lakanto Confectioners Monk Fruit~use code Paige20 at checkout for discount  (increase or decease depending on desired sweetness)
1 Orange, squeeze juice from fruit~should yield approx 1/4 cup
Grated Rind from Orange~should yield approx 1 teaspoon

     Add all ingredients to saucepan and simmer 15-20 minutes til Cranberries are all burst, stir occasionally.  Remove and cool, add to jars for gifts to share or keep, refrigerate and enjoy.  :)

Keto Caramel Sauce






     Is there anything sweeter than Caramel Sauce....how bout carbless Caramel Sauce...!?  If you are looking for a good deal on toppings, this one is at the top of the list.  Each Tablespoon is only 50 calories, 3.9g carbs, 3.9g sugar alcohol, ZERO net carbs, zero protein and 10.5g fat.  If that doesn't say celebrate, I don't know what does!

Ingredients for one cup~
1/4 cup/4 Tablespoons Butter
1/3 cup Brown Sugar Swerve
1/2 cup Heavy Whipping Cream

     Bring Butter and Brown Sugar to low simmer for 5 minutes, add Cream and simmer one more minute.  That's it, #poofitscaramelsauce.  Store in fridge.  Enjoy  :)

Keto Mint Brownies








     Is there anything more festive than Mint+Chocolate!?  You see it shining its star every Holiday Season.  However, no need to limit the exposure, Keto Mint Brownies are a wonder all year round.  Each of these 16 delights are only 245 calories, 18.8g carbs, 3.5g fiber, 13g sugar alcohol, 2.3g net carbs, 5g protein and 24.2g fat.  These are the perfect answer to Keto fat bombs...Brownie style.  :)

Ingredients for 16 servings~
1/2 cup/ 4oz Butter
2.8oz Lily's Extreme Dark Chocolate Bar
3 Extra Large Eggs, room temperature

1 cup Almond Flour
1/2 cup Cocoa
1 teaspoon Neilsen Massey Vanilla
1 heaping teaspoon Baking Powder
Dash Cinnamon

     Mix first set of ingredients til well blended and pour into parchment lined 8X8 pan, bake at 350 for 25 minutes, remove and cool.  Meanwhile mix together second set of ingredients.  When Brownie has cooled, slice in half horizontally, spread bottom layer with Frosting and stack on top of each other.  Lastly, add last set of ingredients to microwave safe bowl, and heat for 30 seconds and stir til well combined, spread over top, once Ganache is set it is ready to eat.  Garnish with Sprinkles if desired, not included in macros.  Enjoy  :)



Carrot Mug Cake






     Anna from IG=@baconbutterbourbon is the Queen of individual servings.  What a perfect talent to create solo desserts!  It makes for many friends.  Especially when you develop a Carrot Mug Cake that is only 380 calories, 30.2g carbs, 3.3g fiber, 24g sugar alcohol, 2.9g net carbs, 11.6g protein, 35g fat.  This amazing treat is a real winner all the way around.  To share or not to share...that is the question... ;)

Ingredients for one serving~
1 medium fresh grated Baby Carrot (approx 10g)
1 Tablespoon Butter, softened to room temperature
1 Tablespoon Almond Flour
1 Tablespoon unsweetened shredded Coconut
1 Extra Large Egg

1/2 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
3g crushed Walnuts (approx one heaping teaspoon)

     Combine the first 10 ingredients til well blended, reserve a few Walnut crumbles for garnish if desired.  Pour into greased 8oz Ramekin or 2 cup Tupperware and microwave 1 minutes.  Meanwhile, stir together Cream Cheese and Confectioners til smooth, frost when ready and garnish with reserved Walnut crumbles.  Enjoy  :)

Keto Chorizo Nachos







     I love experiencing new flavors.  I have never tried Chorizo and was thrilled to give it a whirl.  So glad I am open minded, because this turned out simply "fabulouso".  Each of the four servings are only 469 calories, 6.8g carbs, .5g fiber, 6.3g net carbs, 25g protein and 37g fat.  So many things to do with this concoction, but my number one is nachos.  What is your fancy!? ...hopefully it is to try new things...

Ingredients for four servings~
9oz Beef Chorizo
1 diced Bell Pepper
8 Extra Large Eggs
1/2 cup Cottage Cheese
1/4 cup shredded Cheese

Mixed Greens
Green Onion
Sliced Avocado
Salsa
Cheese
Ranch Dressing
Quest Nacho Protein Chips

     Add Chorizo and Pepper to skillet and heat til cooked thru.  Stir in Eggs til cooked thru, stir in Cottage Cheese and top with shredded Cheese.  Divide into four equal portions.  Choose from bottom list of ingredients to serve with, none are included in macros.  Feel free to create your own additions.  Enjoy  :)

Low Carb Cranberry Sauce






     Tis the Season to bring out the Cranberries.  They adorn all Holiday Tables.  Usually loaded with sugar to off set the tart, my Low Carb Cranberry Sauce proves to be a sugar free delight.  Each 1/4 cup is only 20 calories, 23g carbs, 2g fiber, 18g sugar alcohol, 3g net carbs, .2g protein and .1g fat.  With these macros, not to mention their colorful display, this is a must on every Buffet line.  ;)

Ingredients for 8 servings~
12oz raw Cranberries
3/4 cup Water
3/4 cup Lakanto Confectioners Monk Fruit, more if desired~use code Paige20 for discount at checkout
2 Tablespoons Orange Juice
Dash Orange Extract (optional)

     Add all ingredients to saucepan and simmer til all Berries are burst and sauce has thickened, approximately 10-15 minutes.  Enjoy  :)

Ingredients for 9 servings~
2 pounds chopped Zucchini

     Mix first set of ingredients, toss til well coated and pour into 8X8 baking pan.  Meanwhile, microwave Quest for 10 seconds and pat as flat as possible, bake at 350 for 5 minutes on lined cookie sheet, cool and grind to powder in blender.  Add to bowl along with remaining second set of ingredients and cut in butter til well blended and fully incorporated.  Crumble on top of Zucchini and bake at 350 for 45 minutes.  Enjoy  :)
