Candy Apple Slices

 






     Candy Apple Slices are good any time of year, but especially popular in Fall.  I have come up with a way to make them more edible and enjoyable.  I love a full Apple, but it's next to impossible to eat with out a mess.  So, my big tip is to slice your Apple first and dip one side with all your yumminess.  The entire recipe is only 352 calories, 60.5g carbs, 24g fiber, 15g sugar alcohol, 21.5g net carbs, 2.8g protein and 25g fat.  The biggest hurdle will be in deciding if to make 3,4 or 5 slices...my theory has always been the more the merrier...some say less is more...just let your tummy be your guide, and you can't go wrong!  ;) 

Ingredients~

1 small (approximately 5oz) Fuji Apple, sliced in 3-5 slices

Skewers to equal Apple slices

42grams (90 chips) Lily's Stevia Sweetened Semi Sweet Chocolate Chips

1/2 teaspoon smooth Peanut Butter

28grams (52 chips) Lily's Stevia Sweetened White Chocolate Chips

1/4 teaspoon Coconut Oil

Sprinkles for garnish, as desired

     Slice Apple in 3-5 slices, skewer each slice, rest on parchment paper.  Meanwhile, add Semi Sweet Chips and Peanut Butter to microwave safe bowl and heat for 30 seconds, stir til smooth, dip one side of slices in Chocolate, rest on parchment paper, chill in fridge til set.  Meanwhile, add White Chocolate Chips and Oil to microwave safe bowl, heat for 30 seconds, stir til smooth, add to ziplock bag, snip corner, drizzle across Apple slices, quickly garnish with sprinkles if desired, chill in fridge til set.  Enjoy  :)

Spooky Spider Webs







      Don't be scurred, no spiders in these webs.  They are only filled with deliciousness.  All the yum with very little carbs.  An average calorie count of 64, 10.4g carbs, 2.8g fiber, 2.5g sugar alcohol, 5g net carbs, 1g protein and 3.4g fat per web.  Catch the Halloween spirit with these Spooky Spider Webs!  :)

Ingredients~

48 Pretzels

28grams/60 Lily's Stevia Sweetened Semi Sweet Chocolate Chips

1/2 teaspoon smooth Peanut Butter

28grams/52 Lily's Stevia Sweetened White Chocolate Chips

1/2 teaspoon Coconut Oil

Orange Sprinkles as garnish, if desired

     Arrange 6 sets of 8 Pretzels in a wheel pattern on parchment paper.  Add Semi Sweet Chips and Peanut Butter to microwave safe bowl and heat for 30 seconds, stir til smooth, add to baggie, snip corner, start piping in center and swirl your way out to form webbing on three of the wheels, garnish with sprinkles if desired, chill in fridge til set.  Repeat process with White Chocolate Chips and Coconut Oil on last 3 sets of Pretzel wheels.  Enjoy  :) 

Avacado Chickpea Lettuce Wraps





     Wanna a simple appetizer, lunch or snack!?  ... and did I mention delicious!?  And all for 237 calories, 20g carbs, 10g fiber, 10g net carbs, 6.8g protein and 15.5g fat.  This whips together in a jiffer, and literally melts in your mouth.  Pure health in every bite!  Perfect any time of day or night!  ;)

Ingredients~

1/3 cup Chickpeas

1 small (3.5oz) ripe peeled Avocado

Seasoning to taste (I used Everything Bagel Spice)

Lime Juice to taste

Purple Onion, to garnish as desired

4 small Romaine Lettuce Leaves


     Add Chickpeas to microwave safe bowl and heat for 30 seconds, mash while warm, add in remaining ingredients and continue to blend til smooth, divide into 4 equal portion and add to Lettuce Leaves.  Enjoy  :)

Italian Cabbage Steaks






     These are just darn good and super easy.  My Italian Cabbage Steaks can be a side dish, or you can "beef" them up with extra toppings.  Just let your creativity be your guide.  You could even use them as a pizza base and let everyone top their own.  Definitely worth giving this healthy idea a try!  :)

Ingredients~

1 inch slices of Cabbage

Olive Oil

Seasonings as desired

Toppings as desired, I used Marinara and Parmesan

     Slice your head of Cabbage in approximately 1 inch thick slices, rub each slice with 1 teaspoon of Olive Oil to cover both sides, lay on parchment lined cookie sheet, season as desired, I used Everything Bagel Seasoning, roast at 425 for 25 minutes, flip and roast another 20-25 minutes til starting to char.  Remove, top with Marinara and Parmesan, or as desired.  Enjoy  :)

Sweet Potato Pie

 






     Sometimes, during the holidays, Pumpkin is not always readily available in the grocery store.  So, what's a girl to do, but make a Sweet Potato Pie as a back up...not a bad option, and may even work its way to #1.  Either way, you can't go wrong.  And, I have a few tricks to make this pie even healthier as a post Thanksgiving meal...or heck, just in general.  My big secret is I don't use a crust, because quite frankly, no crust necessary!  Each of the 4 pieces are only 137 calories, 47g carbs, 3.4g fiber, 24g sugar alcohol, 19.6g net carbs, 5.3g protein and 2.6g fat.  So, warm up your wrist and get your whipped cream ready, although not included in macros.  Enjoy  :)  Keep all your options open and check out my Sugar Free Pumpkin Pie:  https://foodfitnessbypaige.blogspot.com/2017/11/sugar-free-pumpkin-pie.html


Ingredients for 4 servings~

1.25 pounds Sweet Potatoes

1/2 cup Golden Lakanto Monk Fruit~use code Paige20 at checkout for discount

2 Eggs

1 teaspoon Baking Powder

Dash Vanilla

Dash Pumpkin Pie Spice (sub with Cinnamon)

Whipped Cream, as desired, as garnish, not included in macros


     Wrap Sweet Potato in aluminum foil, making sure to remove any bad spots, bake at 425 for one hour, remove, cool, discard peel (I just eat mine), smash pulp til smooth, weigh out remaining flesh to confirm one pound or 2 scant cups, add to mixing bowl along with remaining ingredients, mix with beaters til smooth, pour into parchment lined and Pam coated 8" springform pan, (feel free to sub with Pie Pan, just keep an eye on baking time), bake at 375 for 47 minutes, remove, cool, set in fridge to chill overnight.  Remove, garnish as desired.  If you want to add a little frosting, then mix some left over mashed Sweet Potato with a little Monk Fruit, and spread on top for an extra treat!  Enjoy  :)

No Bake Mummy Faces







     Don't be scared, they won't hurt you...that I know of!  These are the good kind of Mummy's.  And so much fun, definitely something to make with your kids!  Each of these 21 mugs are only 62 calories, 7g carbs, 1.9g fiber, .8g sugar alcohol, 4.3g net carbs, 2.6g protein and 4.1g fat.  Get creative and give your guys all kinds of expressions, you are only limited by your imagination.  Happy Halloweening!  :)


Ingredients for 21 Faces~

15oz drained can Garbanzo Beans

2 Tablespoons Lakanto Monk Fruit Maple Syrup ~ use code Paige20 at checkout for discount

1/2 cup creamy Peanut Butter

Dash Vanilla 

Dash Salt

1/4 cup(565g/104 chips) Lily's Stevia Sweetened White Chocolate Chips

42 Lily's Dark Stevia Sweetened Dark Chocolate Chips


     Add Beans to microwave safe bowl, heat for 1 minute, then add Syrup and beat smooth with beaters.  Meanwhile, add Peanut Butter to microwave safe bowl and heat for 30 seconds, add to Bean mixture along with Vanilla and Salt, continue to beat til smooth.  Remove by Tablespoons, form into a smooth circle, then flatten slightly and rest on wax or parchment paper, chill for 30 minutes in fridge.  Meanwhile, add White Chocolate Chips to baggie and let rest in a bowl of hot water til softened, I add boiling water to bowl as my hot water.  When faces have chilled, snip corner of baggie and make a zig zag pattern across face and top with two Dark Chocolate Chips as eyes, while White Chocolate still warm and soft.  Store in fridge, have fun with this festive project.  Enjoy  :)

Tomato Pie








     This takes comfort food to a whole new level, ...a new level of goodness that is!  Who needs pizza when you can have Tomato Pie.  This is big time yum, with unbelievable macros.  Each of the six slices are only 205 calories, 4.6g carbs, 1.3g fiber, 3.3g net carbs, 15.5g protein and 14.5g fat.  So filling, and super with a little salsa on top.  This is definitely one to try...sooner than later!  :)


Ingredients for 6 slices~

4 Tomatoes 

1 Tablespoon Olive Oil

1 chopped Onion

Dash Garlic Powder

Dash Cayenne Pepper

8oz/2 cups grated Mozzarella

4 Extra Large Eggs

Dash Basil (use fresh if desired)

Dash Salt

Dash Pepper

Shredded Cheddar, if desired for garnish

Sliced Green Onion, if desired for garnish


     Slice Tomatoes, let rest on paper towels, season with Salt and Pepper, let rest several hours.  Meanwhile, add Oil, Onion, Garlic and Cayenne to skillet til golden brown, cool and stir in Cheese, Eggs, Basil, Salt and Pepper.  When Tomatoes have fully drained on paper towel, line a greased pie plate with half Tomatoes, top with half of cheese mixture, and repeat. Bake at 375 for 40 minutes, remove and garnish as desired. Lest rest for 5 minutes.  Enjoy  :)
