Keto Cream Cheese Pancakes
I came across several recipes on Pinterest to support the Egg Fast 5 day plan. These really help break up the monotony of the day. I mean, who wouldn't look forward to Pancakes topped with Heavy Whipping Cream. Technically HWC is not allowed on the Egg Fast Diet, but it is a fat and I decided it is ok...and I pretended that I didn't read it wasn't allowed. So sue me... :/ In the meantime, enjoy this hearty decadent wonder for 580 calories, zero carbs or fiber, 20g protein and 52g fat. If you are so inclined, split this into two meals and share one with your buddy doing this with you. Let your fork be your guide! :)
Ingredients for Keto Cream Cheese Pancakes~
2oz/1/4 cup Cream Cheese, softened to room temperature
2 jumbo Eggs
Lakanto Monk Fruit (optional and add amount to desired sweetness, I used 1-2 Tablespoons~use code Paige20 at checkout for discount)
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

1/4 cup Heavy Whipping Cream
Lakanto Confectioners Monk Fruit (optional and add amount to desired sweetness, I use about 1 Tablespoon~use code Paige20 at checkout for discount)
Add first set of ingredients to bowl and mix well with beaters til fully incorporated, drop by scant 1/4 cup onto hot Pam coated skillet and heat til cooked, flip and cook other side, remove to cooling rack, repeat 3 more times with remaining batter. Meanwhile, beat Cream with mixer til stiff peaks form and fluffy. Stack Pancakes and top with Cream and enjoy every decadent bite! :)
Keto French Toast
As if I couldn't love my Keto lifestyle anymore...then Keto French Toast comes into my world. Simply divine, so satisfying, no sacrifice. Each of the two servings are only 412 calories, 12g carbs, 9g fiber, 3g net carbs, 25g protein, and 26g fat. I had this for breakfast, but honestly would be happy to enjoy this regardless of what the clock says. :)
Ingredients for 2 servings~
1 Tablespoon melted Coconut Oil
1/4 cup Almond Flour
2 Tablespoons ground Flax Seed
1 scoop Vital Proteins Collagen Peptides
1 jumbo Egg
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

1 jumbo Egg
1/2 cup Egg Whites
1 Tablespoon Butter

1 Tablespoon chopped Pecans
Mix first set of ingredients in Pam coated 2 cup Rubbermaid Tupperware, microwave 1 minute. Meanwhile, from second set of ingredients, add Egg and Egg Whites, whisk til fully incorporated. When cool enough to handle, cut Bread in half, and then each half into equal thirds. Dip bread pieces in Egg mixture and fry on Pam coated skillet til cooked thru and browned on each side. Stack and add 1/2 Tablespoon Butter, Syrup and Pecans to each serving. Enjoy :)
Keto Broccoli Salad
My Keto Broccoli Salad may not win any beauty contest, but let me tell you what... It can stand up to any dish in flavor ...not sure I have experienced a better tasting side. Each of the 14 half cups are only 131 calories, 5.4g carbs, 1.4g fiber, 1.7g sugar alcohol, 2.3g net carbs, 2.6g protein and 12g fat. So if you are following a high fat lifestyle, this sweet savory superlicious bowl of yum is something you must experience. :)
Ingredients for 14 half cup servings~
6 cups fresh Broccoli Florets
6 slices Bacon, diced
1/2 cup Mayo
2 Tablespoons Lakanto Monk Fruit~use code Paige20 for discount at checkout
1/2 cup chopped Pecans
1/2 cup chopped Purple Onion
Salt, season as desired
Pepper, season as desired
Trim Broccoli to yield six cups, add to large mixing bowl. Meanwhile, add Bacon to skillet, brown til crisp on each side, remove Bacon to paper towel and blot excess grease, add to small mixing bowl. Add Mayo, Monk Fruit, Pecans, and Onion to Bacon and stir til well combined and spoon over Broccoli, mix til well coated. Season as desired. Enjoy :)

Healthy Brownies seem like a contradiction in terms...however, not so! I'm here to prove a point. Since going Keto, a whole new world of yum has opened up. This dichotomy weighs in at 275 calories, 20.6g carbs, 5.3g fiber, 11.3g sugar alcohol, 4g net carbs, 8.7g protein and 25.9g fat. If you are looking for a deep chocolate delight, whip these up today! :)
Ingredients for 9 Brownies~
1 cup Almond Butter
1/4 cup Butter, room temperature
1/2 cup Cocoa

1/4 cup Heavy Whipping Cream
1 teaspoon Baking Powder
Dash Cinnamon

Mix first set of ingredients with beaters til well blended, pour into parchment lined 8X8 and sprinkle top with Chocolate Chips. Bake at 350 for 23-25 minutes, less if you like gooey Brownies. Enjoy :)
Keto Potato Salad
All is not lost when it comes to Keto. I have not found one thing that could not be solved with this lifestyle. My Keto Potato Salad is a perfect addition to a cookout, and would fit well into any everyday menu. This makes a huge bowl, each cup is only 178 calories, 5.4g carbs, 2.2g fiber, 3.2g fiber, 4.5g protein and 15g fat. Add a small cheeseburger and you have the perfect party platter! :)
Ingredients for 11 cup servings~
6 extra large Eggs
1 medium Cauliflower, trimmed to small florets
1 bunch Celery, trimmed and diced
1/2 cup diced Purple Onion
1 medium diced Red Bell Pepper
3/4 cup Mayo, sub with a Chipotle Mayo if desired
Dash Garlic Salt, season as desired
Dash Salt, season as desired
Dash Pepper, season as desired
Add Eggs to saucepan, cover with water, bring to boil, add lid, turn off heat, keep saucepan on burner, set timer for 15 minutes, when timer goes off, drain water and rinse with cool water, peel, chop, and set aside. Steam Cauliflower florets according to desired method, add to large mixing bowl, along with Eggs, Celery, Onion, Bell Pepper and Mayo. Stir til well combined, season as desired. Enjoy :)
Keto Peanut Butter Cookies
Simple is the mantra when it comes to my Keto Peanut Butter Cookies. These are delish, and only 66 calories, 4.7g carbs, 1g fiber, 3.2g sugar alcohol, .5g net carbs, 3g protein and 5.7g fat. They whip up in a flash and will be in your mouth in no time. The other plus is this batch makes 30, plenty to share or store leftovers in the freezer for later. #winning
Ingredients for 30 Cookies~
1 cup no sugar added Peanut Butter
1/2 cup Lakanto Monk Fruit, extra for dipping if desired~use code Paige20 at checkout for discount
1/2 cup Almond Flour
2 Extra Large Eggs
1 teaspoon Baking Powder
Dash Vanilla
Dash Cinnamon
Add all ingredients to a bowl, beat with mixer til well incorporated. Drop by level Tablespoon on Silpat lined cookie sheet. Optional~dip each cookie in extra Monk Fruit. Press fork tine in "X" patter on each cookie. Bake at 350 for 8-10 minutes. Enjoy :)
Keto Zucchini Pecan Muffins
Ingredients for 12 Muffins~
1 small (approx 5oz) Zucchini, ends trimmed
1/4 cup Butter, room temperature
2 jumbo Eggs
1/2 cup Almond Flour
1/2 cup ground Flax Seed
1/2 cup Lakanto Golden Monk Fruit~use code Paige20 at checkout for discount
1/4 cup chopped Pecans
1/4 cup Lily's Stevia Sweetened Dark Chocolate Chips
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
Grate Zucchini into dish towel and wring out excess moisture, add to bowl along with remaining ingredients, beat with mixer til well incorporated. Add 1/4 cup batter to 12 silpat lined cupcake tins. If desired, you can reserve some of the Chips to sprinkle on top. Bake at 375 for 17 minutes. Enjoy :)
Keto Zucchini Stir Fry
Don't give up your favorite things while on Keto, there are literally recipes for everything! My Keto Stir Fry is literally mouth watering, and feels exactly like comfort food. Each serving is only 280 calories, 12g carbs, 5g fiber, 7g net carbs, 21g protein and 14.5g fat. Depending on your daily Carb allotment, this can be on the high side, so you will need to calculate this into your daily macros. Happy fat burning! ;)
Ingredients for 2 Servings~
2 slices Thick Bacon, diced into small pieces
1 Tablespoon Avocado Oil
1 teaspoon chopped Garlic
Dash Cayenne Pepper
8oz sliced fresh Mushrooms
2 Tablespoons diced Onions
4oz diced Chicken Breast
1 small (approx 5oz) diced Zucchini
1 Orange or Yellow Bell Pepper, diced
1/4 cup shredded Parmesan Cheese
Salt, as desired
Pepper, as desired
Red Fresno Chili Pepper, diced for garnish if desired
Add diced Bacon to skillet and cook til crisp, remove Bacon Bits and set aside. Add Oil to Bacon Grease in skillet, along with Garlic and Cayenne, as well as the Mushrooms and Onions til cooked half way. Then add Chicken Breast til cooked thru. Add Zucchini and Bell Peppers til crisp tender. Stir in Bacon Bits, sprinkle with Cheese, season to liking, and finish with Fresno Pepper garnish if desired. Enjoy :)
Frank's Chicken Tenders
How bout a little spice to go with that savory!? Yes, Please! These Keto options keep getting better. Each Frank's Chicken Tenders serving is only 300 calories, 1.7g carbs, .4g fiber, 1.3g net carbs, 34.5g protein and 16.5g fat. A serving is 4oz Breaded Chicken Tenders, 2 Tablespoons Blue Cheese Crumbles, 1 Tablespoons Ranch and 2 stalks Celery. Serve with some steamed buttered Broccoli...all "kindsa" good happenin' here!
Ingredients for 8 servings~
Frank's Buffalo Wing Sauce
2 pounds Chicken Tenderloins
3oz bag of Pork Rinds, crushed
1 cup Blue Cheese Crumbles
8 Tablespoons full fat Ranch
Pour enough sauce over Chicken to coat completely and set in fridge over night. When ready to bake, dredge marinated Chicken thru Pork Rind crumbs and lay on Pam coated foil lined cake pan, bake at 425 for 20 minutes, serve each 4oz of Chicken with 2 Tablespoons Blue Cheese and 1 Tablespoon Ranch. This Keto lifestyle is a yummy way to live. No suffering here! My #keto Snickerdoodles are a perfect case in point. AND, I found a new trick to take my cookies to the next level. Each of the 10 super Snickers are only 49 calories, 4.5g carbs, .6g fiber, 3.6g sugar alcohol, .3g net carbs, 2g protein and 4.3g fat. Have 5 or 6 and make it a mini meal. Who says cookies aren't good for you!?
Ingredients for 10 cookies~
1oz/2 Tablespoons Cream Cheese, room temperature
