Frosted Pinwheel Crinkles










      Frosted Pinwheel Crinkle Cookies!  What started out as a Cinnamon Roll project morphed into Crinkle Cookies, ... and I ain't complain'! This recipe makes 10 cookies, and each Frosted Cookie has 53 calories, 2g net carbs, and 6g protein, for one cookie and one teaspoon frosting.  These are so darn delicious that they would be perfect on any Holiday Table! ... they are even more perfect in my belly  ;)

Ingredients for 10 Pinwheel Crinkles~
2 teaspoons Coconut Oil, melted
3 Tablespoons Coconut Flour
1 scoop Quest Salted Caramel Protein Powder
3 Tablespoons Egg Whites
1/4 cup Lakanto Monk Fruit~use code Paige20 for discount at checkout
1 teaspoon Baking Powder
Dash Cinnamon
Cinnamon Roll Quest Bar, microwaved for 12 seconds
10 teaspoons Cream Cheese Frosting ( recipe below), optional

     Melt Coconut Oil and stir in Coconut Flour.  Then add in Protein Powder, Egg Whites, Monk Fruit, Baking Powder and Cinnamon, blending to make dough.  Pat out dough onto Pam sprayed surface into a 5.5 X 7.5 rectangle.  Microwave Cinnamon Roll Quest Bar for 12 seconds and pat into slightly smaller 5.5 X 7.5 rectangle and stack on top of the dough and roll up tightly, and cut into 10 equal pieces.  Bake on Silpat lined Cookie Sheet at 350 for 7 minutes.  Remove and pat down with Spatula.  Cool and Frost with one teaspoon Frosting.  Enjoy  :)

Ingredients for Frosting~
2 Tablespoons Cream Cheese, brought to room temperature
2 Tablespoon Quest Salted Caramel Protein Powder
2 Tablespoons Low Fat Cottage Cheese
2 Tablespoon 30 cal/cup Almond Milk
2-4 Tablespoons Lakanto Confectioners Monk Fruit, depending on taste

     Blend thoroughly in Magic Bullet.
