Pepperoni Pizza Pancakes
Mamma Mia Pizzeria!!! You wanna enjoy a little taste of Italy with big bold flavor!? Take a peek at my Pepperoni Pizza Pancakes weighing in at 308 calories, 8.6g net carbs, and 49.6g protein! That's right, FOURTY NINE... as in almost FIFTY!!! Don't be jealous of your non health compliant friends any longer, put pizza back in your meal line up plans... (every darn day if you want to)! Get creative and add some veggies, invite your friends, and have a pizza making party ;) PS Food is Fun
Ingredients for a Personal Stack~
1/4 cup low fat Cottage Cheese
1/3 cup Egg Whites
1 scoop Quest Multi Purpose Protein Powder
1 teaspoon Baking Powder
Dash Garlic, Salt, Pepper, Basil, Italian Seasoning, Oregano, Cayenne (what ever spices you desire)
8 slices Turkey Pepperoni, diced
1/4 cup Pizza Sauce
2 Tablespoons shredded Mozzarella
1/2oz Roma Tomato, diced and drained on paper towel
Mix Cottage Cheese, Egg Whites, Protein Powder, Baking Powder and Spices in Magic Bullet or stir to blend. Heat skillet and drop 1/4 cup batter onto Pam sprayed surface, then sprinkle a 1/5 of the Pepperoni pieces on top of uncooked side, pressing slightly down into batter, then flip and cook other side til golden brown, repeat with remainder of batter. When ready to assemble, top each pancake with 1 Tablespoon of Sauce, 1/4 of the Cheese and stack all together. On top Pancake there should be enough Pepperoni left to sprinkle on top along with Tomato. Enjoy ;)
