Hatch Chili Chicken Corn Chowder






     Hatch Chili Season is such a fun time of year, the recipe creations are all the rage!  "Whoda thunk" a Chowder would be such a fabulous Hatch Chili spin off!  Head over to Whole Foods to pick up your Hatch Chilis (along with Olathe Sweet Corn), and take advantage of these once a year offerings!  Then come home and use them both in your Hatch Chili Chicken Corn Chowder!  Each cup serving is only 196 calories, 27.6g net carbs and 13.3g protein.  This large pot makes 9 cups, so that can only mean one thing, ...it's time for a party!  Nothing says celebrate like Hatch Green Chilis and Olathe Sweet Corn!  ;)

Ingredients for 9 cups~
1 Tablespoon EVOO
1 medium Onion, diced
1 Tablespoon chopped jarred Garlic
Dash Cayenne Pepper
1 pound boneless skinless Chicken Tenders
1.5 pounds peeled diced White Potato
4 small ears of Corn on the Cob, boiled and trimmed from Cob, net weight of Corn Kernels should be 12 ounces.
1 Tablespoon Chicken Base or 3 cubes Chicken Bouillon
14.5oz can Petite Diced Tomatoes
1 cup (about 6) skinned seeded Hatch Green Chilies
Salt to taste
Dash Pepper for garnish
Sour Cream for garnish, if desired
Cilantro Leaves for garnish, if desired

     Heat EVOO in skillet, add diced Onion, Garlic and Cayenne til golden brown.  Then add Chicken til cooked thru, breaking into bite size pieces with spatula.  Meanwhile, boil water in large pot, add peeled diced potatoes and soft boil for 20 minutes or fork tender, add Corn on Cob for last 5 minutes.  Remove from heat and  drain, reserving 2 cups Potato water and transfer to Chicken skillet and stir in Chicken Base til dissolved.  Mash softened Potatoes with fork in large pot, shave Corn off Cob, add half shaved Corn to large pot along with Chicken mixture.  Add can of Tomatoes, Hatch Chilies and other half of corn to blender, blend til smooth and stir into large pot.  Add Salt to taste, serve with with Dash Pepper, Sour Cream and Cilantro Leaves as garnish, if desired.  Enjoy  :)
