Frosted Oatmeal Cookies
Sometimes...(and not very often)... all the planets and stars line up with exactness and things just work out. Such was the case in my kitchen this morning. These 19 Frosted Oatmeal Cookies are evidence that life is still good. Each of these little darlings are only 28 calories, 3g net carbs, 1g protein and 1g fat. Have 11 and make it a mini meal...then you will be having a perfect day too!
Ingredients for 19 Frosted Oatmeal Cookies~
1 cup Quick Cooking Oats (I purchased an off brand and the Oats were more meal and less flakes)
1/2 cup/4oz unsweetened Applesauce
3 Tablespoons Egg Whites
1/4 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
Dash Cinnamon
Dash Salt

1 Tablespoon Butter, room temperature
1oz/2 Tablespoons Cream Cheese, room temperature

1-2 teaspoons 30 cal/cup Almond Milk
Dash Vanilla
Dash Butter Extract

Sprinkles, for garnish, not included in macros
Mix first set of ingredients til well combined, chill in fridge for one hour. Using a Tablespoon, measure out dough, and add to Silpat lined cookie sheet. Bake at 350 for 10-12 minutes. Meanwhile, mix second set of ingredients til fully incorporated and smooth. When cookies have cooled, add one teaspoon Frosting to each cookie, garnish with Sprinkles if desired (not included in macros). Note: may have a little leftover Frosting. Enjoy :)
Peanut Butter Oatmeal Cookies
Can you think of two better friends than Peanut Butter and Oatmeal. They just love being together...especially in the same bite! With a few simple tricks, I turned these "besties" into reduced fat wonders. Each of these 18 cookies are only 33 calories, 3g net carbs, 3g protein and .7g fat. The real magic comes in your first bite, ...it may have barely any fat...but no one would ever know! Yeah me!!! ;)
Ingredients for 18 Peanut Butter Cookies~
3/4 cup Quick Cooking Oats (I purchased an off brand and the Oats were more meal and less flakes)

Mix first set of ingredient til well combined, chill in fridge for one hour, remove and drop by the Tablespoon onto Silpat lined cookie sheet. Bake at 350 for 10-12 minutes. Meanwhile, stir second set of ingredients til smooth and desired consistency, frost cooled cookies with 1 teaspoon frosting, garnish with Sprinkles if desired, not included in macros. Enjoy :)

Flower Cookies
Giving flowers on Mother's Day is a tradition. But what if you decided to take tradition to the next level!? ...you could easily become the favorite kid with this showing! These blooms will put a smile on her face and love in her heart. Show off your baking skills, while showcasing your healthy offering. Ingredients for 12 Flower Cookies~
2 Tablespoons Butter, softened to room temperature
2oz Cream Cheese, softened to room temperature
1 Extra Large Eggs, room temperature
1/2 cup Almond Flour
1/4 cup Coconut Flour

12 Blueberries

Stir together first set of ingredients til well incorporated, chill for one hour in fridge. Divide dough into 12~1oz portions of dough. Using a flower shaped cookie cutter, press an ounce of dough inside cutter to shape into flower. Gently remove cutter. lift dough and center the dough on a greased cupcake tin, delicately place dough in cupcake cavity while bringing the "petals" up and over the rim to form the flower. (dough may not go all the way to the bottom). Repeat with remaining dough, if petals are too close together, you may need to use every other slot and bake in two batches. Bake at 350 for 10-12 minutes, remove and cool. Meanwhile, add Pudding mixture and Almond Milk to bowl and beat with beaters til thoroughly blended, set in fridge to thicken. When Flower shells have cooled, remove from pan, pour Confectioners Erythritol on small plate and dip the petal, dusting will leave a white film. Add Pudding to cavity, top with a Blueberry, and garnish with Sprinkles if desired. Store in fridge, Enjoy :)

Don't you just love when somethings seems like a dessert, but in reality it can be labeled a healthy snack...and you're fingers aren't even crossed behind your back. To prove my point, each of these 9 Oatmeal Cookie Cups are only 86 calories, 9g net carbs, 6g protein and 2g fat. One of these will really hit the spot, but why not have 3 and make it a mini meal. ...I wonder, is that what they mean by making healthy choices!? If so, I'm all in!

Mix first set of ingredients til well combined, divide into 9 equal portions and press against inside form of 9 Silpat lined cupcake tins. Bake at 350 for 10-12 minutes. Meanwhile, add second set of ingredients to bowl and mix with beaters til thoroughly blended. When cups have cooled, add 2 Tablespoons to each cup, top each with 6 Chocolate Chips. Store in fridge. Love Language Cookies
There are 5 main love languages...cookies did not make the list, however they have always been my #1 love language, so I guess there are actually 6 in my book (...I penciled in the margins). My affection has always stayed true, never wavered. My passion continues to grow when consumption only sets me back 45 calories, 3g net carbs, 2.4g protein and 2.3g fat (macros are for 1 Tablespoon dough and 1 Tablespoon Frosting). Say what you will, for me cookies are the universal language of love...and I don't hate it! Find your voice and speak your truth.

Mothers Day Protein Bars
Knowing that some mothers like to celebrate in a healthy way, give macro friendly treats that mom will treasure. One fun idea I had was to turn my Quest Protein Bars into a spotlight on M.O.M. Then add a little protein frosting and you will have a cute surprise to put a smile on her face. Nothing makes me happier than receiving high protein low carb non guilty pleasures. For me, these are the best gifts of all.
Ingredients for M.O.M.~
1 Quest Protein Bar (good options are Coconut Cashew, Chocolate Peanut Butter, Rocky Road)
1 Tablespoon Butter
1 ounce Cream Cheese

Protein Pancake Skewers
What better way to show your affection than to surprise someone special with Protein Pancake Skewers for breakfast. (I know that sentence was way too long with out punctuation, but bold statements break rules...I digress). These simple Protein Pancakes deliver a punch of health right to the belly, and making them in mini form only adds to the pleasure. And btw, is there anything more fun than eating food off a stick...why is that!? #idk Add some Sugar Free Syrup for dipping and you practically have a carnival on your hands. Simple to make, this extravagant presentation is a winner all the way around.

Add Oats to Magic Bullet or blender and grind to powder, add remaining first set of ingredients and blend til well incorporated. Drop batter by teaspoon on hot skillet coated with cooking spray, when ready, flip and cook other side. Macros for Pancake are 280 calories, 19g net carbs and 25g protein.
