Pumpkin Cupcakes







     Cupcakes are everyone's friend, and these will be your "besties".  Each of these 9 BFF's are only 215 calories, 19.3g carbs, 1.7g fiber, 16g fiber, 1.6g net carbs, 5.3g protein and 24g fat.  These Pumpkin Cupcakes are the perfect addition to any Fall festivities, ...actually any time of year.  Consider these voted most popular in class!  :)

Ingredients for 9 frosted Cupcakes~
1/4 cup/4 Tablespoons Butter, softened to room temperature
1/2 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
2 Extra Large Eggs, room temperature
1/2 cup Pumpkin
1 cup Almond Flour
1 teaspoon Baking Powder
Dash Pumpkin Pie Spice (sub with Cinnamon)
Dash Vanilla

2 Tablespoons Butter, softened to room temperature
4oz Cream Cheese, softened to room temperature
1/4 cup Lakanto Confectioners Monk Fruit~use code Paige20 at checkout for discount
Dash Pumpkin Pie Spice (sub with Cinnamon)
Dash Vanilla

     Mix first set of ingredients til well blended, pour 1/4 cup batter into 9 silicone lined cupcake liners, bake at 350 for 22-24 minutes.  Meanwhile, mix second set of ingredients til well blended, frost Cupcakes when cooled.  Enjoy  :)
