High Protein Greek Yogurt Berry Chia Parfait (Meal Prep Breakfast, No Added Sugar, 34g Protein)

INGREDIENTS:

7 1/2 cups zero percent plain Greek yogurt (Fage)

6 cups mixed frozen berries

6 tablespoons chia seeds

Squeeze of 2 oranges (optional, not included in macros)


INSTRUCTIONS:

In a large skillet over low heat, add frozen berries and cook gently until they break down, melt, and begin to simmer into a thick sauce. Stir occasionally to prevent burning and help the berries soften evenly.


Once the berries are fully broken down and juicy, stir in chia seeds until well combined. If you want a thinner or richer sauce, squeeze in the juice of two oranges and mix thoroughly. This step is optional and not included in the macros.


Remove from heat and allow mixture to cool completely so it thickens as the chia seeds absorb liquid.


While the berry mixture cools, divide 7 1/2 cups Greek yogurt evenly into 6 bowls, about 1 1/4 cups per serving.


Once cooled and thickened, top each yogurt bowl with about 1/2 cup of the berry chia mixture (1/6th of the recipe). Store in the fridge for easy grab-and-go breakfasts all week.
