41g Protein Pesto Chicken Pasta Recipe
Servings: 8
Serving Size: Approximately 1¾ cups
Ingredients
2 tablespoons olive oil, divided
1 onion, chopped
3 carrots, diced
2 tablespoons chopped garlic, divided
Dash cayenne pepper
2 pounds chicken breast, diced
1 yellow bell pepper, diced
8-ounce box lupin bean pasta
¾ cup cottage cheese
1–2 cups fresh basil leaves
2 tablespoons lemon juice
¼ cup Parmesan cheese
Dash salt
½ cup sliced sun-dried tomatoes
Instructions
Heat 1 tablespoon olive oil in a large skillet. Add chopped onion, diced carrots, 1 tablespoon garlic, and cayenne pepper. Cook over low-medium heat until the onions become golden brown. Do not rush this step — allowing the vegetables to slowly caramelize builds incredible flavor.
Meanwhile, cook the lupin bean pasta according to package directions.
Add cottage cheese to a small blender or Magic Bullet and blend until silky smooth. Set aside.
Add basil leaves, remaining tablespoon of olive oil, lemon juice, Parmesan cheese, and salt to the blender. Blend until you reach your desired pesto consistency.
Drain the pasta and stir in the blended cottage cheese and pesto mixture until fully combined.
Cook the diced chicken breast with the vegetable mixture until fully cooked. Drain any excess juices from the skillet, then stir the chicken mixture and sun-dried tomatoes into the pasta.
Divide into 8 equal servings and enjoy!
