Ingredients~
1/2 cup egg whites
1/2 cup soy crumbles
Slice of diced purple onion
Wedge of Queso Laughing Cow Cheese
Diced Avocado
Diced Roma Tomato
2 Tablespoons Salsa
Pam
Spray microwave safe mug with Pam. Add soy crumbles and onion and microwave for 2 minutes. Add eggs and microwave another 1- 1 1/2 minutes and stir til combined. Add Queso and stir til melted thoroughly. Top with salsa, avocado and tomato. Enjoy ;)
