Black and White Cookies











     I have a new BFF Andrea... no, she doesn't know I exist, ... no, she doesn't know my name, ... no, we have never met ... yes, I might have the early onset symptoms of creepy stalker syndrome developing ... but hey ...she's worth it !!!  I stumbled across her on the Quest Facebook page for getting the "Recipe of the Week" the week after I did and I quickly fell in love with her FB page and Blog.  You must check her out !!!  Andrea's Protein Cakery is where I saw her Black and White cookie recipe and I couldn't get to the kitchen fast enough to start my own masterpiece.  This could honestly be in the Mall Food Court, it is that decadent tasting!  The other fun part is that this is a GIANT cookie !!!  And how often are we eating giant cookies these days!?  ... well alot now ...  :0  The even better part is that is has 293.5 calories, 14g carbs and 42.5g protein.  You could cut back on the frosting if you wanted less calories, carbs or protein as an option.  Also, she suggested that you can make this into smaller cookies, ... but I gotta say there is just something sinister about the GIANT cookie that gives me a devilish grin on the inside ... but you can choose your own poison!!!  Drink up  ;)

Ingredients for Cookie~
1/4 cup Vanilla Protein Powder
1 Tablespoon Coconut Flour
2-3 Tablespoons chopped Apple
1 1/2 teaspoon Almond Milk
1 1/2 teaspoon lemon juice
Dash Vanilla
Dash Cinnamon
Pinch Lite Salt

     Blend Apple, Milk and Juice in Magic Bullet, then add the rest of the ingredients til blended thoroughly.  place on Silpat lined cookie sheet and pat in large circle.  Bake at 325 for 7-8 min, or til firm (careful not to overbake).  Cool and flip over to ice smooth side. Note:  Feel free to make smaller cookies instead of one large cookie ... but... you will be delegated to the whimp kids club if you do!!!  ;)

Ingredients for Icing~
2 Tablespoons Vanilla Protein Powder
2 Tablespoons Chocolate Protein Powder
4 teaspoons Almond Milk
1 packet Stevia

     Mix each Protein Powder with half the Stevia and Milk in separate bowls.  Add more Milk if necessary to get spreadable consistency, then spread the flat side of cookie with each icing.  Eat or store in refrigerator!  Enjoy  :)
