Lemon Cake
I've been on a Lemon kick lately, and so when I saw this recipe on Andrea's Protein Cakery, I just had to try it out .. and add a few Blueberries and Strawberries, of course! ;) This was alot of fun to make as it calls for Almond Meal, and it's so easy to make your own by throwing your almonds in the Magic Bullet for a few seconds... it's amazing how a few seconds of grinding can make you feel like you are kindred spirits with Martha Stewart!!! HA ;) These are great stats for an 1/8 of a cake~152.5 calories, 6g carbs and 23.75g protein. Try this out for your next dessert occasion and enjoy the fruit flavors coming together with mildly lemon accents! Have fun ;)
Ingredients for Frosting~
1 1/2 cup 0% Greek Fage Yogurt
3/4 cup Vanilla Protein Powder
2 teaspoons Vanilla
Mix together thoroughly and store in refrigerator while making and baking cake.
Ingredients for Cake~
1/2 cup 0% Greek Fage Yogurt
1 cup plus 2 Tablespoons Egg Whites
1/4 cup Almond Meal ( just grind Almonds in Magic Bullet if you don't have this on hand)
1 cup Vanilla Protein Powder
1/4 cup fresh squeezed Lemon Juice
Zest of one Lemon
1 teaspoon Baking Powder
Dash of Cinnamon
Dash of Vanilla
Mix all together and bake in Parchment lined 7 or 8 inch baking pan at 325 for 40 minutes, test with tooth pick for doneness. Remove and cool completely. If you want two layers, use Dental Floss to cut cake into layers and frost accordingly after cooled. I garnished mine with Lemon Zest, and Blueberries and Strawberries. Enjoy ;)
