Onion Protein Focaccia Bread







     If you haven't heard me brag about Andrea's Protein Cakery, then listen up !!!!  This girl rocks !!!  Definitely check out her website and Blog !!!  I have no idea how she comes up with all her ideas, I would love to meet her someday and pick her brain !!!  But I saw this yummy bread idea on my Facebook feed ( make sure to "like" her on FB and you will get to see all her latest creations too), and decided to give it a whirlie!  Food is Fun  ;)

Ingredients~
2 Tablespoons EVOO
1 cup of diced Onions
1 heaping teaspoon chopped jarred garlic
Salt and Pepper to taste
3/4 cup Egg Whites
2 Tablespoons Whole Psyllium Husks
1/3 cup natural unflavored Rice Protein Powder
Dash Salt

     Heat 1 Tablespoon EVOO in skillet, add onions, garlic, salt and pepper, and cook til golden brown.  May take 20 minutes, stirring frequently. Remove from heat and let cool.  Meanwhile, mix remaining ingredients as well as the other Tablespoon EVOO and let sit so the Psyllium can expand to thicken the batter.  After batter thickens, pour into parchment paper lined 8X8 or 9X9 glass dish, and top with onions.  Bake at 325 for 22 minutes, or til cooked through.  Cut into 8 pieces and serve. Each piece has 74 calories, 2g carbs, and 7g protein.  Enjoy  ;)
