Did you know that a plant cannot produce chlorophyll without light!? And, did you know that White Asparagus grows underground, hence the lack of color in White Asparagus!!! They are exactly the same, with the exception of light during growth! White Asparagus is considered to be slightly milder in flavor and a bit more tender than its green counterpart, but all varieties and colors may be used interchangeably in recipes. So, if you want to try something new this time of year, reach for the white instead of the green and see what you think! ;)
Ingredients~
1 bunch White Asparagus
EVOO
Salt
Pepper
Turkey Bacon, cooked and crumbled
First of all you have to use a potato peeler to peel off the outer layer of the asparagus because the white outer layer is bitter, and snap off the tough ends as well. Then, brush Asparagus with EVOO and lay in foil lined pan, and sprinkle with salt and pepper. Bake at 450 for 15 minutes, turning over half way thru baking, make sure to not let brown as it will turn bitter. Garnish with cooked and crumbled Turkey Bacon, if desired. Enjoy ;)
