Starburst Chocolate Chips









     It's that time of year for all things fireworks...even when it comes to cookies!  And I don't hate it!  In fact, who doesn't love a little sparkle!?  To add to the celebration, each of these 25 cookies are only 69 calories, 8.6g carbs, 6.6g fiber, 2g net carbs, 4g protein and 4.6g fat (macros don't include sprinkles).  So, if you are in charge of bringing dessert to the party (...even if the party is just staying at home by yourself), put this at the top of the list!

Ingredients for 25 Cookies with 1 teaspoon Frosting~
2 Tablespoons Butter, softened to room temperature
1/2 cup Lakanto Golden Monkfruit
2 Extra Large Eggs
1/2 cup super fine Almond Flour
1/2 cup Oats, grind to powder in Magic Bullet/Blender
1/4 cup ground Flaxseed
4 scoops unflavored Vital Proteins Collagen Peptides
1 teaspoon Baking Powder
Dash Lite Salt
Dash Cinnamon
Dash Vanilla
1/4 cup Lily's Stevia Sweetened Dark Chocolate Chips

2 Tablespoons Butter, softened to room temperature
2oz Cream Cheese, softened to room temperature
2 scoops Vital Proteins unflavored Collagen Peptides
1/4 cup Lakanto Confectioners Monk Fruit
Dash Butter Extract
Dash Vanilla Extract

Food Coloring
Sprinkles for garnish if desired, not included in macros

     Beat Butter and Monk Fruit til thoroughly whipped together, start adding in remainder of ingredients, mixing as you go.  When it comes to the Chocolate Chips, stir in with spoon.  Chill dough for 2 hours, then drop by level Tablespoon onto Silpat lined cookie sheet, bake at 375 for 13 minutes.  Meanwhile, beat together second set of ingredients til fluffy and well incorporated, divide into thirds and dye one red and one blue, add each of the three colors to a baggie, snip the corner and decorate as desired.  Store left over Frosting in fridge, macros for each cookie include one teaspoon Frosting.  Add Sprinkles for garnish if desired.  Enjoy  :)
