Keto Macadamia Nut Cookies
Ring in the day with a few Macadamia Nut Cookies to get your motor running. Each of these babies are only 69 calories, 4.6g carbs, 1.8g fiber, 1.9g sugar alcohol, .9g net carbs, 1.7g fiber, and 6g fat. I think 6 of these would make the perfect breakfast or afternoon snack. Let the fun begin! :)
Ingredients for 32 cookies~
1/3 cup Butter, room temperature
1/4 cup Lakanto Monk Fruit~use code Paige20 for discount at checkout
2 jumbo Egg, room temperature
1/2 cup shredded unsweetened Coconut
1/4 cup Chia Seeds
1/4 cup ground Flax Seeds
1/4 cup chopped Pecans
1/4 cup chopped Macadamia Nuts
1/4 cup Almond Flour
1/4 cup Lily's Stevia Sweetened Dark Chocolate Chips
1 teaspoon Baking Powder
Dash Salt
Dash Cinnamon
Dash Vanilla or Butter Extract, or both
Add all ingredients to mixing bowl and stir to combine, or use beaters til well combined. Using Tablespoon, measure out 32 cookies and place on silpat lined cookie sheet, bake at 375 for 9 minutes. Enjoy :)
Not 32 cookies...I used a Tbsp measuring spoon = 24 cookies
