Keto Hasselback Zucchini







     Let's be real, is it the toppings you really like...or is it the base!?  I am here to tell you that you will not miss the potato in these Keto Hasselback Zucchini!  You might even prefer the squash to that root veggie.  Filled with flavor that will put a smile in your belly, these can be enjoyed for 161 calories, 3.5g carbs, 1g fiber, 2.5g net carbs, 7.4g protein and 12.1g fat.  You biggest decision will be what to serve these with, I envision a nice grilled steak for the perfect pairing.  :)

Ingredients for two servings~
1 medium Zucchini
1/2 Tablespoon Avocado or Olive Oil
Dash Salt
Dash Pepper
Dash Garlic Powder
1oz solid Cheese
2 Tablespoons Sour Cream
2 Tablespoons Bacon Bits
Green Onions, sliced, for garnish if desired

     Make several slices in your Zucchini, make sure to put a serving spoon on each side of Zucchini to make sure you do not slice all the way thru, cut in two equal halves.  Rub each with Oil and season as desired, bake on parchment lined baking dish at 400 for 45 minutes.  Meanwhile, slice the Cheese in the amount of slits in Zucchini, wedge Cheese slices in Zucchini slits, and return to the oven til Cheese melts.  Remove and garnish with Sour Cream, Bacon and Green Onions.  Enjoy  :)
