Stuffed Olive Salad
Before you send me hate mail about how many things I pack on my plate, save your breath...it's so worth it you won't even care after your first bite of this luscious combo. PLUS, my hot tip is to have enough of these ingredients on hand to make this several times a week. The macros are a tad high, so feel free to cut this in half, but I do Intermittent Fasting so this is a good example of my large meal for the day. To that point, a full portion is 601 calories, 15.6g carbs, 8.6g fiber, 7g net carbs (if you want to reduce this number by 4.6 then omit or reduce the Tomatoes), 46.5g protein and 38.4g fat (if you want to increase this number then use regular Bacon). Ingredients for one Salad~
2 cups Baby Spinach Leaves
3.5oz cooked and shredded Chicken Breast
1 Tablespoon Ranch
2oz sliced Avocado
1 boiled shelled Egg, sliced
2 slices cooked and crumbled Turkey Bacon
10 Cherry Tomatoes
6 Blue Cheese stuffed Olives (sub with your favorite Olive, but these are seriously delicious)
Seasoning as desired
Lay Spinach on plate, top with Chicken, and drizzle Ranch on Chicken, continue to add remaining ingredients. This Salad is so rich with so many wonderful flavors, very little Dressing is needed, and quite frankly would be a distraction. Enjoy :)
