Barbecue Bacon Blue Cheese Salmon Salad
When I discovered the Hickory flavor of G Hughes Sugar Free Barbecue Sauce I knew Salmon was in order...not to mention Bacon and Blue Cheese...isn't your mouth watering just thinking of that combination!? This is a rather large hearty Salad, so you decide if this if for one or for duo. The entire thing weighs in at 684 calories, 13g carbs, 8.7g fiber, 4.3g net carbs, 47.5g protein and 45.2g fat. This is so filling, it could definitely be your main meal of the day, and plan on it keeping you full for several hours after... ;)
Ingredients for one large or two medium Salads~
6oz Salmon Filet
2 cups mixed Greens
1 small ripe Avocado, diced
2 Tablespoons G Hughes Hickory Sugar Free Barbecue Sauce (I found mine at Walmart)
1/4 cup Blue Cheese Crumbles
1 slice center cut Bacon, cooked and crumbled
Salt, to taste
Pepper, to taste
Lay Salmon on foil lined cookie sheet, bake at 425 for 20 minutes. Meanwhile, add Greens to bowl, and garnish around perimeter with chopped Avocado. When Salmon is finished, remove skin and lay in middle of bowl, top with Sauce, Cheese, Bacon and season as desired. Enjoy :)
