Patriotic Breakfast Muffins







     Whether its Memorial Day, Fourth of July or any other patriotic holiday, these muffins will fit right in!  Red, white and blue in every bite makes you want to just put your hand over your heart!  Each of these 9 treats are only 163 calories, 14.5g carbs, 1.7g fiber, 10.2g sugar alcohol, 2.6g net carbs, 4.6g protein and 13.8g fat.  Start any occasion right by saluting your breakfast, then enjoy the whole thing with your free hand!  Check out this link to all my Fourth of July recipes~https://foodfitnessbypaige.blogspot.com/2018/06/fourth-of-july.html

Ingredients for 9 Muffins~
4 Tablespoons Butter, softened to room temperature
1/3 cup Lakanto Monk Fruit
2 Extra Large Eggs, room temperature
1/4 cup Sour Cream or plain Greek Yogurt
1 cup Almond Flour
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
1/2 cup Blueberries
1/2 cup chopped Strawberries (about 4 medium-large)

     Whip Butter and Monk Fruit in mixing bowl, then add in Eggs and Sour Cream to blend well.  Add Flour, Baking Powder, Cinnamon and Vanilla til fully incorporated, then stir in berries.  Drop by 1/4 cup in patriotic cupcake lined tin, sub with desired liners.  Bake at 350 for 27 minutes.  Enjoy  :)
