This may take a minute to pull together all these fresh ingredients, but soooooo worth it with every bite...besides what else do you have to do. This makes 18 cups of fun, perfect for a crowd, especially if you use it as a side. Turn it into a heavy meal with a nice piece of Salmon. For six 3 cup servings, it is only 246 calories, 39.9g carbs, 6.6g fiber, 33.3g net carbs, 7.5g protein and 5.7g fat. And I have to say, I enjoyed every single morsel. :)
Ingredients for six 3 cup servings~
16oz shredded Cabbage
1 large (about 5 1/2oz) shredded Carrot
4oz (about 1.5 cups) fresh chopped Broccoli
1 medium chopped Red Bell Pepper
2 cups seedless Red Grapes
1 medium (about 5 1/4oz) chopped Fuji Apple
8oz cooked shelled Edamame
2 sliced Green Onions
1/4 cup chopped Cashews~sub with favorite
1/4 cup chopped Walnuts~sub with favorite
1/2 cup Very Cherry Balsamic Vinegar from California Balsamic (californiabalsamic.com)
All all ingredients to a large mixing bowl, toss to fully incorporate. Serve alone as a Vegan meal, or add a nice piece of baked Salmon or Chicken if preferred. Enjoy :)
