I love my meatless meals, the admiration is exponentially greater if I can make several servings at one time. This is one that involves many flavors and textures, the more the better I say! Each of these 5 servings are only 358 calories, 102g carbs, 22.3g fiber, 79.7g net carbs, 21.2g protein and 9.2g fat. The best thing about this recipe is that it can last all week.😊
Ingredients for 5 servings~
1 pound trimmed halved Brussels Sprouts
2 teaspoons Olive Oil
1 cup Quinoa
8oz bag frozen Edamame
10oz bag shredded Carrots, or shred your own
8oz chopped large Fuji Apple
Yellow Bell Pepper, chopped
1oz, approximately 1/4 cup, crumbled Feta
2 Tablespoons chopped Pecans
1/3 cup Very Cherry Balsamic ( I use California Balsamic~sub with your favorite)
Sliced Purple Onion, as garnish if desired
Coat Brussels Sprouts with Oil, spread on parchment lined cookie sheet, bake at 425 for 15 minutes, stir and bake another 15 minutes. Meanwhile, cook Quinoa according to directions, as well as Edamame, cool and add to large mixing bowl along with Brussels Sprouts, Carrots, Apple, and Bell Pepper, mix well. Top with Feta, Pecan, Balsamic and Onion. Divide into 5 three cup servings, store leftovers in fridge. Enjoy 😊
