Strawberry Banana Oatmeal Cake

                                                         


     Do you love a good sugar free cake?  Who doesn’t!?  Actually who would even know with this one because it tastes so sweet on its own.  And all the while, feeling proud of yourself for making wise choices.  Check out these macros, each of the 12 pieces are only 176 calories, 22.8g carbs, 3.8g fiber, 19g net carbs, 7g protein and 5g fat.  This is the perfect pre/post workout fair, breakfast or dessert!  You choose which one, or even choose them all!😉

Ingredients for 12 servings~

6 extra large Eggs

3 extra long very ripe Bananas 

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

3 cups Oats

1 pound diced Apples (I prefer Cosmic Crisp, Fuji, Envy, or Honeycrisp)

1 pint diced Strawberries 

2 Tablespoons chopped Pecans

     Add Eggs and Bananas to bowl and blend with a Mixer til well incorporated, add in Baking Powder, Cinnamon and Vanilla, then finish with blending in Oats.  Stir in Apples and Strawberries, pour into 9X13 parchment lined cake pan, top with Pecans, bake at 350 for 35 minutes.  Enjoy 😊

Carrot Cake

     Are you looking for a new twist on Carrot Cake!?  If so, I have fun project for the kitchen!!!  This is a very different take on cake, but definitely worth the “try”.  Not to mention the macros are hard to beat!  I divided this into 6 generous servings,  only 319 calories, 32g carbs, 7g fiber, 25g net carbs, 18g protein and 1g fat.  The big question is, do we call this breakfast, lunch or just a fun snack?  What do you think?  With all that protein, it can easily take the place of Chicken 🐓 #sugarfree #lowfat #highprotein #singleingredientfoods #nothingprocessed

Ingredients for 6 large servings~
8oz/1.5 cups chopped Apple
2 pounds Carrots
12 Extra Large Eggs
1 cup Oats
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
1 cup Blueberries
2 Tablespoons chopped Walnuts

     Line a 9X13 pan with parchment paper (optional, otherwise grease your pan), sprinkle the chopped Apple over bottom of pan.  Trim the ends off your Carrots, rinse thoroughly, cut each Carrot into 3 or 4 pieces, and add to large heavy duty blender, such as a Vita Mix, or your Mix Master might work also. (You can peel your Carrots if you desired, but not needed, …you do you).  Continue to add  Eggs, Oats, Baking Powder, Cinnamon and Vanilla to the blender, then blend til well incorporated and smooth, pour over Apples, top with Blueberries and Walnuts.  Bake at 350 for 40 minutes.  Enjoy 😉

Pizza Meatloaf

 




     If you are looking for a quick hearty dinner idea, one that everyone will love, then keep reading!!!  Let me introduce my Pizza Meatloaf!  Each of the four dense pieces are only 276 calories, 9.3g carbs, 1.3g fiber, 8g net carbs, 39.5g protein and 9.8g fat.  Did you happen to catch those macros!?  This is a great source of a low fat high protein combo, leaving you satisfied for hours!!!  What have you got to lose by trying this one on for size, the biggest question will be whether to add this to a Salad, or maybe some steamed Broccoli and Carrots.  What would be your favorite way to consume!?😋

Ingredients for 4 hearty servings~

1 pound 99% lean ground Turkey

2 extra large Eggs

1/4 cup (1oz) shredded Mozzarella Cheese

1/2 cup Oats

Seasoning as desired~Salt, Pepper, Garlic, Basil, Oregano

1/4 cup Pizza Sauce

8 slices Pepperoni

1/4 cup (1oz) shredded Mozzarella Cheese

2 Tablespoons chopped Black Olives

Parsley if desired for garnish

     Mix first set of ingredients til thoroughly combined, pat into parchment lined loaf pan, bake at 400 for 30 minutes, remove and top with Pizza Sauce, then Pepperoni, Cheese and Black Olives.  Bake at 400 for another 10 minutes.  Remove and garnish with Parsley if desired.  Enjoy 🍕
