Are you looking for a new twist on Carrot Cake!? If so, I have fun project for the kitchen!!! This is a very different take on cake, but definitely worth the “try”. Not to mention the macros are hard to beat! I divided this into 6 generous servings, only 319 calories, 32g carbs, 7g fiber, 25g net carbs, 18g protein and 1g fat. The big question is, do we call this breakfast, lunch or just a fun snack? What do you think? Ingredients for 6 large servings~
8oz/1.5 cups chopped Apple
2 pounds Carrots
12 Extra Large Eggs
1 cup Oats
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
1 cup Blueberries
2 Tablespoons chopped Walnuts
Line a 9X13 pan with parchment paper (optional, otherwise grease your pan), sprinkle the chopped Apple over bottom of pan. Trim the ends off your Carrots, rinse thoroughly, cut each Carrot into 3 or 4 pieces, and add to large heavy duty blender, such as a Vita Mix, or your Mix Master might work also. (You can peel your Carrots if you desired, but not needed, …you do you). Continue to add Eggs, Oats, Baking Powder, Cinnamon and Vanilla to the blender, then blend til well incorporated and smooth, pour over Apples, top with Blueberries and Walnuts. Bake at 350 for 40 minutes. Enjoy π
