Are you a fan of Sheet Pan Dinners? So easy, so delicious, so little clean up. All the things I love in one meal. How can you go wrong!? Follow along and see if this one speaks to every one of your senses. The other bonus is this can be used to separate into four lunches, and meal prep for the week is practically done!🥘 PS…the other bonus is a half pound of Shrimp per serving🍤
Ingredients for four servings~
Small head chopped Cauliflower
1 cup Cherry Tomatoes
Small chopped Red Onion
1 Tablespoon chopped Garlic
2 teaspoons Olive Oil
2 pounds raw XL Shrimp
1 bunch trimmed Asparagus
1 Lemon, cut in half
Feta Cheese Crumbles, if desired
Olives, if desired
Add Cauliflower, Tomatoes, Onion, and Garlic to parchment lined sheet pan, drizzle with 1 teaspoon of the Olive Oil, toss to coat. Put in oven at 450 for 30 minutes, remove, stir. Add peeled Shrimp, Asparagus and remaining teaspoon Oil to bag to coat, spread on top of vegetables, put back in oven at 450 for another 15 minutes. Remove and squeeze with fresh Lemon, and garnish with Feta and Olives (and any seasoning) if desired. Enjoy 😉
