Southwest Shrimp Salad

 







     Sometimes don't you just feel a little "Shrimpy".  I know I do, and when it hits, I must comply!  So how about pulling together my Southwest Shrimp Salad for your next meal of deliciousness.  And the best part is it's filled with protein, fiber and healthy fats.  This dishes up loads of roughage as well, and will put a smile in your tummy (yet so flavorful you will be the hero of your own story).  We all know Tuesday's are for Taco's, but this one is for any day of the week!  ;)


Ingredients (You determine the amounts, and thus the servings)~
Ear of Corn in Husk (sub with canned)
Can of Black Beans
Diced fresh Tomatoes (desired amount~I did a dozen Cherry Tomatoes)
1/2 Bunch of Cilantro
2 sliced Green Onion (more or less to taste)
1 Tablespoon chopped Garlic
1 diced Jalapeño (more or less to taste)
Lime Juice to taste
Salt to taste

1/2 cup 0% Fage Greek Yogurt
1/2 Bunch of Cilantro
1 Tablespoon chopped Garlic
Lime Juice to taste
Salt to taste

Shrimp
Olive Oil
Chili Lime Seasoning (sub with preferred seasoning)

Slaw (Coleslaw or Broccoli Slaw)

     Add husked ear of Corn to microwave for 1 minute, let cool and steam in the husk, remove husk and cut off Corn, add to bowl along with the rest of the ingredients in the first section, set aside.  Add second set of ingredients to small blender and whip til fully incorporated and desired consistency.  Spritz Shrimp with Olive Oil, and season as desired, add to skillet and cook til pink on both sides.  When ready to assemble, add slaw to bottom of your bowl, top with Corn and Black Bean mixture, drizzle with a little Yogurt sauce, and top with Shrimp. Enjoy the heck out of this "limey" invitation!  :)

Viral Taco Bowl








     Being a follower is not always bad, I appreciate the inspiration I glean from others!  And the real magic starts to happen when you take a good idea and make it even better...(cough cough, you know where this is going, right!?).  Such was the case with the Viral Taco Bowl that has been floating around!  It’s a beautiful amalgamation of Taco Meat, Roasted Sweet Potatoes, Cottage Cheese, Avocado, and I added fresh Salsa.  The official recipe calls for a topping of Hot Honey, but since I don’t eat Sugar, I topped mine with fresh Blueberries!  Hold up…before you start contemplating what you will write in the hate mail you want to send…let me explain the weirdness!  For starters, sometimes weirdness can be a superpower.  I saw someone add Pineapple to this dish and that’s when my wheels started turning.  My creativity kicked into high gear and the idea of Blueberries wouldn’t leave me.  So I tried it and my instincts were correct, adding those purple little orbs changed everything.  I think I just took this party to the next level!🥳

Ingredients~
Chopped Sweet Potatoes (desired amount)
Olive Oil (desired amount)
Chili Lime Seasoning, optional, sub with preferences
1 pound 96% lean ground Beef
1 chopped Onion
1 Tablespoon chopped Garlic
Dash Cumin
Dash Chili Powder
Dash Cayenne
Cottage Cheese (desired amount)
Avocado slices (desired amount)
Salsa (desired amount)
Fresh Blueberries (desired amount)
Seasoning as desired

     Diced Sweet Potatoes, spray or toss with Olive Oil, season with Chili Lime Seasoning or as desired, add to parchment lined cookie sheet, bake at 400 for 40 minutes, stir half way through.  Meanwhile, add Beef, Onion, and Garlic to skillet and cook down, breaking into small crumbles, drain any excess juices and season as desired with Cumin, Chili Powder and Cayenne.  When ready, add desired amount of Sweet Potatoes, seasoned Beef, Cottage Cheese, Avocado, Salsa and optional Blueberries to each bowl.  Enjoy the heck outta this one, it’s a winner!😋

Protein Chia Oat Bread

 










     Who loves a one bowl recipe, raise your hand!?🙋‍♀️  Let me say it again for the people in the back, this is a simple mix that you can throw together, stir and call it good!!!  This is an upscale rendition of my Chia Oat Bread, I just supersized the protein and added some shredded veggies.  Each of the 6 pieces are only 383 calories, 45g carbs, 10g fiber, 35g net carbs, 22g protein and 12g fat.  This is something that totes great to the gym for a post workout meal, or makes a great breakfast or lunch.  Definitely one to keep around because it comes together fast, little clean up and great macros!  Tell me you aren’t intrigued! 🍞 


Ingredients for 6 hearty pieces~

6 extra large or jumbo Eggs

2~5.3oz 0% Fage Plain Greek Yogurt (or sub with 1 1/4 cup)

10oz bag of grated Carrots

1/4 cup Chia Seeds (sub with 1/2 ground Flax Seeds)

1 Tablespoon Everything Bagel Seasoning

Dash Baking Powder

4 cups Oats

     

     Add everything to a large mixing bowl except for the Oats and stir vigorously til well combined, then stir in Oats til fully incorporated.  Pat into loaf bread shape on parchment lined  cookie sheet and bake at 350 for 40 minutes.  If you prefer, you can reserve the Bagel Seasoning and sprinkle it on top versus stirring in the batter.  Enjoy 😉
