Spaghetti Squash Carbonara






     Spaghetti Squash Carbonara is the perfect guilt free way to enjoy your favorite topping over a healthy holder of all things delicious!!!  Combine a little Bacon, a little Parmesan,a little Peas and a little Yolk filled Eggs and you will experience starbursts of flavor with each and every bite!!!  Such a simple dish to whip up, add it to your menu ASAP and you will be everyone's favorite person  ;)

Ingredients~
1 Roma Tomato, diced and drained on a Paper Towel thru out the day
1 Spaghetti Squash, sliced in half lengthwise and scrape out all strands and seeds
6 slices Turkey or Regular Bacon, sliced into bite size pieces
1 Yellow Onion, diced
2 Tablespoons heaping chopped jarred Garlic
Dash Cayenne Pepper
1 can of Peas, drained
2 Jumbo Eggs
1 cup Shredded Parmesan
Salt and Pepper, to taste

     Dice and drain Roma Tomato thru out day.  Slice Spaghetti Squash lengthwise, scrape out strands and seeds, place face down in foil lined pan and bake for an hour and half at 375, remove and let cool for 15 minutes, then scrape strands from shell.  While Squash is baking, add Turkey Bacon, Onion, Garlic and Cayenne to skillet and cook til Bacon is crisp tender and Onions are golden brown.  Then stir in Peas, remove from heat and let cool slightly.  When cool enough so Eggs won't cook from heat, stir in Eggs and Cheese, then stir in hot scraped Spaghetti Squash til everything is well incorporated and Eggs are thoroughly cooked from heat of the Squash strands.  Top with drained diced Roma Tomatoes, and season as necessary.  Enjoy  ;)
